The Cook 1 role is an essential position within the Lodge kitchen operations. This role is focused on producing hot and cold food items prepared to the highest standards as established by kitchen management. The position demands expertise in a variety of cooking techniques including frying, grilling, baking, roasting, and poaching, alongside proficiency in preparing sauces and dressings. The Cook 1 will take on numerous responsibilities such as preparing sandwiches, salads, and basic vegetable preparations including slicing and dicing, as well as meat, fish, starches, and other menu items including soups and sauces as directed by team leaders.

This job requires meticulous attention to detail to ensure food quality and presentation meet Pebble Beach’s renowned standards. The Cook 1 is expected to manage station setup (mise en place), buffet stations, and carving or stir-fry duties as needed. They are also tasked with maintaining cleanliness, managing food rotation for freshness, and assisting other cooks and kitchen lines to foster a cooperative team environment. The role includes duties such as training new cooks and collaborating with butchers to maintain consistency in portions and inventory.

Job Requirements

  • Basic hot/cold food cooking knowledge
  • proficient knife skills
  • five years kitchen experience including two years in equivalent position at a premier restaurant, resort or hotel
  • high school diploma or equivalent
  • ability to work in a fast-paced kitchen environment and maintain cleanliness
  • willingness to comply with union dues if applicable

  • adherence to company safety, health and sanitation policies

Job Qualifications

  • High school diploma or equivalent
  • five years kitchen experience including two years in equivalent position at a premier restaurant, resort or hotel
  • proficiency in basic hot/cold food cooking and knife skills
  • ability to follow recipes and maintain recipe documentation

Job Duties

  • Assign tasks to employees with the approval of the team leaders
  • prepare cold food sandwiches, salads, and dressings
  • perform basic vegetable prep including slicing, dicing and proper handling
  • prepare meat, fish, vegetables, starches and other menu items
  • execute frying, grilling, baking, roasting and poaching techniques
  • prepare sauces including saucier and butter sauces
  • set up mise en place for the station
  • set up buffet stations and perform designated functions such as carving or stir fry
  • time cooking of food to ensure coordinated completion
  • check quality of food produced at the station
  • arrange food attractively on plates
  • assist with dish up for banquet functions
  • add garnishes to complete plates
  • help other cooks and lines as needed
  • assist special events as necessary
  • rotate food in coolers, dry storage and mise en place to ensure freshness
  • keep work areas and refrigerators clean
  • clean and maintain equipment and cooking surfaces
  • report faulty equipment or unsafe conditions
  • train new cooks in their responsibilities and skills
  • work with butcher for consistency in product and inventory
  • contribute to daily food order
  • discuss production schedules with team leaders
  • make suggestions to improve food quality and presentation
  • requisition food in absence of team leaders
  • comply with all safety, health and sanitation policies
