The Cook position at Courtyard Manchester, located in Manchester, NH, plays a critical role in maintaining Highgate's high standards of culinary excellence and guest satisfaction. The Cook is responsible for preparing all food items according to standardized recipes for various dining outlets including restaurants, room service, employee cafeterias, and banquets. This role demands a keen attention to detail and a dedication to producing appealing and appetizing dishes. The position involves ensuring cleanliness, safety, and sanitation throughout the kitchen and work areas while minimizing waste and optimizing cost-effectiveness in food production. Scheduled hours are primarily on Friday and Saturday mornings, specifically from 6 a.m. to 10 a.m. on Fridays and from 6:30 a.m. to 10:30 a.m. on Saturdays. The Cook will prepare buffet displays and banquet foods according to hotel specifications, perform station and food preparation before opening, and maintain an organized and clean kitchen environment. Additionally, the role requires adherence to health department regulations and company policies regarding food safety and storage standards. The Cook is a team player who must be ready to support other kitchen positions as needed and operate kitchen equipment proficiently while following the company’s "Clean As You Go" policy. Job Requirements
- High school diploma or equivalent or experience in a related field preferred
- culinary experience required
- flexible and able to work long hours sometimes
- able to exert medium work with up to 50 pounds of force occasionally
- ability to stand during entire shift
- able to withstand temperature variations both hot and cold
- knowledge of menu preparation and cooking techniques
- ability to follow health and safety regulations
Job Qualifications
- High school diploma or equivalent preferred
- culinary experience required
- thorough knowledge of menus and preparation required according to hotel standards
- proficiency in cooking techniques including charbroiling, poaching, deep-frying, sauté, braising, roasting, and par-cooking
- knowledge of herbs and spices and proper usage
- ability to stand for entire shifts
- ability to withstand temperature variations
- basic understanding of kitchen sanitation and safety
- teamwork and communication skills
Job Duties
- Maintain cleanliness and organization of all storage areas
- complete necessary food and station preparation prior to opening the restaurant to ensure prompt and efficient service during operating hours
- prepare and display buffet food items according to hotel standards
- recognize quality standards in fresh vegetables, fish, dairy, and meat products
- maintain a clean and sanitary environment with proper handling, storage, and sanitation knowledge
- prepare food for banquets following specifications on Banquet Event Orders
- prepare and service food for the employee cafeteria as specified
- prepare all foods following hotel standard recipes and specials under direction
- breakdown buffets and kitchen line, storing food and equipment properly at the end of each meal
- work banquet food station as scheduled
- know the location and operation of fire extinguishing equipment
- practice safe work habits to avoid injury
- use production charts as per hotel standards
- support any kitchen position in need of help
- follow all health department and company food and storage safety regulations
- operate and maintain cleanliness of kitchen equipment
- maintain a "Clean As You Go" policy
- assist in storage and rotation of food items
- sign keys out and back in under supervision as needed
