Acting as a lead person in the production area, this role occasionally requires stepping in for the Chef or Manager to ensure smooth kitchen operations.

Job Duties

  • In collaboration with the Executive Chef, research and design new menu plans for various food service programs and customer populations, specifically focusing on current culinary trends and heart healthy cooking
  • Keep recipes, files, and quantity reports up-to-date
  • Inventory supplies and prepare purchasing lists weekly, completing appropriate forms and related computer data entry
  • Assure daily special menus are prepared and presented appropriately and on-time by setting production schedules
  • Oversee the work of Cook and Culinary Assistant and serving staff assigned to assist in special preparations
  • Provide training if necessary to other staff
  • Prepare all complex and high skilled culinary dishes following established production guidelines
  • Adjust recipes with Executive Chef approval
  • Conduct research into customer likes and dislikes and make appropriate changes to menu offerings utilizing customer suggestions
  • Act as lead person in the production area and relieve for Chef/Manager when necessary
