Job Description
The Durham Bulls are one of Minor League Baseball's most recognized and successful franchises. Based in Durham, North Carolina, the Bulls have built a strong legacy within professional baseball, attracting fans not only for their sports excellence but also through their active involvement in community events. Every year, Durham Bulls Athletic Park (DBAP) hosts a wide range of activities including professional baseball games, collegiate events, concerts, festivals, and community gatherings, making the venue a central hub for entertainment in the region. The Concessions Manager at Durham Bulls Athletic Park plays an essential role in creating a seamless and memorable food and beverage experience during all DBAP events. This is a full-time management position reporting directly to the Director of Food & Beverage. The Concessions Manager is responsible for overseeing all concessions outlets throughout the stadium, which includes permanent stands, portable concession locations, subcontractors, and specialty promotions during games and other events. This leadership position requires an experienced food and beverage professional with a strong operational mindset who can effectively manage high-volume event environments and ensure both operational excellence and financial success. The Concessions Manager leads a team of supervisors and seasonal staff, managing hiring, employee training, scheduling, and performance management to maintain high standards of guest service and operational efficiency. Additionally, this role demands expertise in financial oversight, including budget management, P&L monitoring, inventory controls, and revenue growth strategies.
Operational responsibilities extend to ensuring concession stands are fully stocked, equipment such as fryers and POS systems are maintained and functioning properly, and food production adheres to minimal waste principles. The manager is also expected to uphold all safety and sanitation standards in line with ServSafe guidelines and government health regulations, including responsible alcohol service policies. Regular collaboration with internal departments like Marketing, Ticketing, and Human Resources, as well as cooperation with vendors and distributors, is critical to delivering a consistent and high-quality concessions experience. The Concessions Manager must be prepared to work an event-based schedule, which includes nights, weekends, and holidays, while maintaining professionalism and a guest-first culture throughout all interactions. Job Requirements
- Bachelor's degree preferred
- 5+ years of relevant management experience
- ServSafe Certification
- experience in food and beverage operations
- ability to manage high-volume events
- proficiency with POS and Microsoft Office software

- knowledge of federal, state, and local health regulations
- capability to handle physical demands including standing and walking for extended periods

Job Qualifications
- Bachelor's degree in Hospitality, Business, or related field preferred
- 5+ years of management experience in high-volume food and beverage operations
- experience in a sports, entertainment, or event venue environment strongly preferred
- multi-unit concessions experience preferred
- ServSafe Certification required
- strong leadership and team development skills
- excellent written and verbal communication abilities
- proven ability to manage multiple priorities in a fast-paced, event-driven environment
- strong financial acumen and understanding of P&L management
- proficiency in POS systems and Microsoft Office (Excel, Word, Outlook)

Job Duties
- Lead, coach, and develop supervisors and seasonal team members
- manage hiring, onboarding, training, scheduling, and performance management
- conduct pre-shift meetings and daily team briefings
- implement progressive coaching and disciplinary procedures in partnership with HR
- promote a culture of accountability, professionalism, and guest-first service
- identify and develop future leaders
- direct all aspects of concessions operations across multiple outlets
- ensure all concession stands and portable locations are fully stocked, staffed, and event-ready
- execute operational plans to meet projected attendance and demand
- oversee food production sheets to ensure accurate production and minimal waste
- conduct event-day facility walks and troubleshoot operational challenges in real time
- ensure all menus, product offerings, packaging, and pricing are executed as designed
- coordinate equipment maintenance including fryers, grills, coolers, and beer systems
- ensure all POS systems are updated, maintained, and functioning properly
- manage operational budgets and assist in developing annual financial plans
- monitor and manage monthly P&L statements
- drive revenue growth through strategic promotions and upselling initiatives
- ensure accurate cash handling procedures and reconciliation processes
- oversee inventory management including monthly physical inventories, product transfers and requisition tracking, beverage wastage reporting, and theoretical margin analysis
- control labor and operating costs within budgeted guidelines
- ensure high standards of hospitality and service at all concession locations
- respond promptly and professionally to guest concerns and service issues
- collaborate with marketing and operations teams to implement promotions and specialty events
- maintain clean, visually appealing concession areas and displays
- ensure full compliance with federal, state, and local health regulations
- maintain all safety and sanitation standards (ServSafe guidelines)
- enforce responsible alcohol service policies and complete required incident reporting
- conduct monthly safety training sessions
- maintain strong working relationships with local health officials
- ensure all required alcohol service signage and protocols are in place
