We are currently looking for an experienced Commissary Manager to join our team at the Detroit Airport (DTW). This role is crucial to our operation, involving comprehensive management of commissary activities including purchasing, high-volume food production, delivery logistics, and storage, all aimed at sustaining top-tier food quality and safety. Job Requirements

  • Minimum of 2 years post-high school education
  • Bachelor’s degree preferred
  • 3-5 years of experience in restaurant or food service management
  • Experience with direct P&L responsibility
  • Experience in multi-restaurant foodservice purchasing
  • Culinary production background preferred
  • Proficiency in MS Office
  • Ability to interact at all levels of staff
  • Strong analytical and problem-solving abilities

Job Qualifications

  • Minimum of 2 years post-high school education, bachelor’s degree preferred
  • 3-5 years management experience in restaurant or food service with P&L responsibility
  • Multi-restaurant foodservice purchasing experience
  • Culinary production background preferred
  • Proficient in MS Office
  • Strong interpersonal skills to interact with executives, union representatives and hourly staff
  • Analytical skills to conduct gap analysis and improve operations

Job Duties

  • Manage all commissary activities including purchasing, food production, delivery logistics, and storage
  • Ensure food quality and compliance with company and food safety standards
  • Optimize food and labor costs to maximize profitability
  • Oversee accurate and timely delivery to airport restaurants
  • Liaise with vendors to meet purchasing and service requirements
  • Handle inventory, scheduling, and health regulation adherence
  • Resolve routine problems and escalate complex issues
