The position available is a full-time management role focused on overseeing daily kitchen utility operations. This role is based at the Gaylord National Resort & Convention Center in National Harbor, Maryland, and offers a competitive annual salary range of $70,000 to $96,000, with potential bonus eligibility for outstanding performance. The main responsibility is to manage the kitchen staff who are not directly involved in cooking, including dishwashers and kitchen helpers. The role requires strong leadership skills to supervise these teams effectively while ensuring the smooth operation of dish room activities, food running, night cleaning, back dock maintenance, and banquet plating. The successful candidate will work closely with other management team members to maintain high standards of cleanliness, safety, and operational efficiency. Additionally, the role involves inventory control for food, equipment, and other supplies, enforcing sanitation standards compliant with all regulations, and fostering a positive work atmosphere that encourages employee satisfaction and guest delight. This position serves as a critical link in the kitchen operations, combining hands-on management with strategic oversight to optimize productivity and service quality. Job Requirements
- High school diploma or GED
- 4 years experience in procurement, food and beverage, culinary or related area
- OR 2-year degree in Hotel and Restaurant Management, Hospitality, Business Administration or related major
- 2 years experience in procurement, food and beverage, culinary or related area
- Ability to manage kitchen utility staff and operations
- Knowledge of food handling and sanitation standards
- Strong leadership and organizational skills
- Ability to communicate effectively with team and management
- Willingness to adhere to company policies and procedures
Job Qualifications
- High school diploma or GED with 4 years related experience
- OR 2-year degree in Hotel and Restaurant Management, Hospitality, Business Administration or related field with 2 years related experience
- Proven leadership skills managing kitchen utility or similar operations
- Ability to supervise and motivate staff
- Knowledge of food safety, sanitation, and loss prevention practices
- Strong communication and interpersonal skills
- Experience with inventory management and operating budgets
- Ability to enforce policies and maintain workplace standards
- Demonstrated commitment to exceptional guest service and employee development
Job Duties
- Manage daily kitchen utility operations including dish room, night cleaning, back dock cleaning and maintenance
- Supervise kitchen employees not engaged in cooking such as dishwashers and helpers
- Order and manage supplies ensuring availability of equipment, tools, and uniforms
- Schedule events and employee work shifts
- Control inventories of food, equipment, smallware, and liquor and report shortages
- Inspect supplies, equipment, and work areas to ensure compliance with standards
- Enforce proper cleaning routines and use of dish room machinery
- Ensure compliance with food handling, sanitation standards, and applicable laws
- Provide leadership and direction to kitchen team to achieve operational goals
- Supervise employees, provide training, and conduct performance feedback
- Manage department expenses to achieve budget goals
- Promote guest satisfaction and continuous improvement
- Handle recruitment, hiring, and disciplinary procedures in accordance with policies
- Maintain open communication with executives, peers, and subordinates
- Investigate employee accidents and enforce loss prevention policies
