Job Requirements
- High school diploma or equivalent
- minimum of two years of experience in a kitchen environment including one year in a supervisory position
- ability to read printed words and numbers in printed form and on computer monitors
- hearing sufficient to clearly hear voices, alarms, bells, and horns
- capability to perform work requiring repetitive eye/hand coordination
- ability to lift and carry up to 25 lbs for up to 5 minutes at a time
- ability to distinguish color
- ability to see and distinguish objects or symbols at various distances
- ability to climb ladders and staircases multiple times per day
- ability to stand, walk, stoop, reach, and handle products constantly throughout the day
Job Qualifications

- knowledge of ware washing techniques, chemical usage, and sanitation standards

- supervisory experience in a fast-paced kitchen or culinary environment
Job Duties
- Compile chemical orders for purchasing as necessary
- update chemical order guide
- maintain Material Safety Data Sheets (MSDS) with current information
- supervise all washing and storage of small wares
- ensure proper storage of items and readiness of work areas for the next shift
- supervise daily cleaning of kitchen and ware washing areas
- supervise daily, weekly, and monthly deep cleaning schedules
- maintain equipment and facility cleanliness
- promptly report equipment malfunctions and coordinate with Facility Engineer
- perform bi-annual small wares inventory and recommend order levels
- perform daily temperature readings on freezers and cooling equipment
- maintain an organized food dock area
- assist with daily security and lock down of culinary department
- delegate assignments to steward staff and monitor progress
- consult with Executive Sous Chef on staffing levels
- allocate personnel during events for optimal labor efficiency
- maintain a safe and code compliant working environment
- foster a high energy work ethic
- train line-level stewards on ware washing techniques, chemical usage, storage procedures and sanitation standards
- manage check-in and check-out of temporary and part-time stewarding staff
- discuss event needs with Executive Sous Chefs three days prior
- supervise transportation of food items to proper locations
- coordinate event flow with Catering Manager and Culinary department
- receive deliveries of food and non-food items ensuring proper storage
- maintain organization of dry goods and freezer storage
- stage set-up of hot boxes, plates, and covers for daily events
- stage breakdown stations for daily events
