The Chef Tournant position at Gordon Ramsay Burger located at Flamingo LV represents an exciting opportunity to join a dynamic culinary team within this prestigious resort environment. As Chef Tournant, you will support the Executive Chef and Chef de Cuisine in managing the daily operations of the kitchen, ensuring the outlet runs smoothly and products consistently meet high-quality standards. This role requires a hands-on leader who can oversee multiple aspects of the back of house (BOH) operations, including staff management, quality control, compliance with health and safety regulations, and maintaining cleanliness. You will step in as acting Chef de Cuisine when needed and play a critical role in upholding the brand's culinary standards and delivering a superior guest dining experience.

In this position, you will be responsible for managing kitchen staff assignments, ordering and receiving product, preparing prep lists, and supervising the quality of food preparation from start to finish. The role demands a thorough understanding of kitchen equipment operations and safety protocols to ensure a safe and efficient working environment. You will also be tasked with fostering a positive work culture by supporting team development, enforcing policies fairly, and collaborating closely with the General Manager and front-of-house staff to ensure seamless service.

Ideal candidates will bring a minimum of five years of culinary experience, with at least one year in a supervisory or similar leadership role, preferably within 5-star luxury hotels or high-end restaurants. Culinary creativity, excellent communication skills, and a passion for streamlining operations to increase productivity will be crucial to your success. Certification in food safety such as ServSafe and compliance with local health standards are mandatory. The ability to work under pressure in a fast-paced, high-volume environment and willingness to undertake additional responsibilities are also important.

Job Requirements

  • Minimum of 5 years of cooking experience
  • Bachelor’s Degree preferred
  • Culinary school or apprenticeship preferred
  • Minimum of 1 year experience in similar role
  • Experience in fast-paced, high-volume environment
  • Proven track record within 5-star deluxe hotels or reputable restaurants
  • ServSafe Certified
  • Knowledge, understanding and compliance of health and safety, sanitation, proper chemical usage, fire procedures and HACCP
  • Knowledge of all kitchen equipment operations
  • Ability to read, write and understand English
  • Ability to perform basic/intermediate math skills
  • Ability to establish and maintain effective working relationships with management, staff and guests
  • Food Safety Employee Training and Food Handler’s Card certification
  • Able to manage team of up to 100 managers and supervisors and 600 hourly employees

Job Duties

  • Assume responsibilities in the absence of Chef de Cuisine
  • Display professionalism by conducting oneself with responsibility, integrity, accountability and excellence
  • Oversee all aspects of daily BOH operations including managing staff station assignments, ordering and receiving product, preparing prep lists and instruction for the team, quality checking product during all stages of preparation, general oversight of production and service, conducting regular internal health and safety inspections
  • Ensure quality food product and presentations
  • Ensure food is handled in a respectful manner and processed and stored in accordance with SNHD regulation
  • Adhere to and enforce company policies and statutory requirements regarding health and safety, sanitation, fire procedures and HACCP
  • Ensure safe and proper use of equipment
  • Ensure kitchen equipment is in good working order and address issues promptly
  • Maintain a high standard of cleanliness and sanitation in culinary work areas
  • Teach, develop and support culinary team
  • Hold team members accountable fairly and consistently
  • Support and foster a caring work environment
  • Work with General Manager and front of house staff to ensure positive guest experience
  • Minimize waste and spoilage by monitoring occupancy forecasts
  • Maintain high standards of appearance and personal hygiene
  • Undertake additional duties within overall scope of the position
