Job Description

The Citadel, located at 171 Moultrie Street, Charleston, SC, is a prestigious military college known for its rigorous academic programs and commitment to developing leaders of character. The Citadel's campus dining services play a vital role in providing quality food service to students, faculty, and staff, ensuring a positive dining experience that supports the institution's mission. We are currently seeking a dedicated and experienced Chef, Sous to join our culinary team at The Citadel. This is a full-time role with a schedule of Friday through Wednesday, 12:00 pm to 10:00 pm. The salary for this position is $65,000 annually, and paid parking is offered as an added perk. The position focuses on assisting in the successful operation of the food service program, including culinary planning, food preparation, and team leadership within a dynamic educational facility environment. As a Sous Chef, you will play a critical role in overseeing kitchen operations, ensuring food quality, safety, and presentation meet high standards. Your responsibilities will include helping to plan and create menus, managing inventory and ordering, and supporting cost control measures. You will collaborate closely with the marketing and culinary teams to introduce and roll out new culinary programs that align with current food trends and customer expectations. This role requires a seasoned culinary professional who can motivate, train, and develop kitchen staff to achieve operational goals effectively. Emphasis is placed on compliance with health department regulations, adherence to client culture and guidelines, and upholding the company's quality standards. The Sous Chef will be an integral part of a team that values learning, growth, and making a meaningful impact through food service. Applicants should have a robust background in culinary arts with at least 5 years of related experience, including one year in a management role. Experience across various food service settings such as restaurants, hotels, corporate dining, educational institutions, military, or healthcare is highly valued. The ability to manage production sheets, understand food cost controls, and implement safety and sanitation protocols is essential.
