The position of Culinary Associate at The Ritz-Carlton Half Moon Bay is essential in maintaining the high culinary standards guests expect. Culinary Associates are responsible for preparing and cooking food following precise recipes, ensuring quality, taste, and presentation align with the Ritz-Carlton standards. The role includes tasks such as ingredient preparation — chopping, portioning, and storing — as well as monitoring food quality and testing for doneness through tasting and other methods. Attention to sanitation and health regulations is critical, with a strong emphasis on maintaining cleanliness and safety in the kitchen environment.

Culinary Associates work closely with chefs and other kitchen staff to anticipate business levels, assist during busy periods, and ensure smooth kitchen operations. Job Requirements

Job Duties

  • Maintain adherence to sanitation health regulations and requirements
  • meet with the Chef to review assignments and anticipate business levels and changes
  • prepare ingredients for cooking including portioning chopping and storing food
  • prepare and cook food according to recipes quality standards presentation standards and food preparation checklist
  • monitor food quality while preparing food
  • weigh measure and mix ingredients according to recipes or personal judgment
  • test foods to determine doneness using tasting smelling or piercing methods
  • ensure proper portion arrangement and food garnish for service
  • serve food in proper portions onto proper receptacles
  • anticipate and communicate assistance needed during busy periods
  • be aware of food and labor costs and monitor food levels to minimize waste and maintain controls
  • direct and assist Stewards to maximize cleanup efficiency
  • provide new ideas and run the department in absence of the Chef and Sous Chef
  • use kitchen tools safely and appropriately
  • wash and disinfect kitchen area tables tools knives and equipment
  • check and ensure the correctness of temperature of appliances and food
  • follow all company safety and security policies and procedures
  • report maintenance needs accidents injuries and unsafe work conditions to manager
  • complete safety training and certifications
  • ensure uniform and personal appearance are clean and professional
  • welcome and acknowledge all guests according to company standards
  • speak with others using clear and professional language
  • support team to reach common goals and respond appropriately to concerns of other employees
  • ensure adherence to quality expectations and standards
  • stand sit or walk for extended periods
  • move lift carry push pull and place objects weighing 10 pounds or less without assistance
  • perform other reasonable job duties as requested
