Hilton Chicago is actively seeking a Chef de Cuisine to join its talented culinary team at Kitty O'Sheas. This full-time position requires flexible availability, including nights, weekends, and holidays, reflecting the high-volume and dynamic nature of the hospitality industry. The ideal candidate will have at least one year of supervisory or Sous Chef experience in a similarly fast-paced kitchen environment. As Chef de Cuisine, the individual will not only oversee daily culinary operations at Kitty O'Sheas but may also be required to support other food outlets within the hotel, including banquet services. The role demands strong culinary expertise, consistent food quality, and the ability to manage multiple kitchen operations smoothly.

Job Requirements

Job Duties

  • Lead and oversee daily culinary operations for Kitty O'Sheas and other outlets
  • Lead daily culinary production including meal preparation, food quality and presentation
  • Ensure compliance with safety and sanitation standards
  • Manage team member productivity and performance
  • Control food costs and overall profitability
  • Expedite service during peak periods to ensure timely delivery
  • Perform general management duties including budget and forecasting
  • Visually inspect and select quality food products
  • Create and implement new menus and food items
  • Manage labor schedules, food cost controls, inventory levels, and waste reduction
  • Monitor and develop team member performance through supervision and training
  • Recruit, interview, and train team members
