Established in 1929, The Wigwam spans 440 acres and features 331 guest rooms, delivering an authentic Arizona experience. The company is currently seeking a passionate and experienced Chef de Cuisine to join their Culinary team at The Wigwam. This leadership role requires someone with a proven track record in high-volume professional kitchens, a creative spirit in menu development, and the ability to inspire and mentor culinary staff.
The Chef de Cuisine will oversee the planning, production, and presentation of all food offerings for the restaurant, ensuring adherence to safety and sanitation standards while maintaining profitable quality. This individual will act as the face of the restaurant within the hotel and surrounding community. Core responsibilities include creating and implementing seasonal menus, managing inventory and orders, collaborating with the Restaurant Manager to exceed guest expectations, and training culinary and operations teams on menu details and specials. The role involves daily kitchen walkthroughs, team meetings, and participation in food and beverage leadership forums. This position demands a hands-on leader who models excellence, manages food costs effectively, ensures allergen awareness, and maintains kitchen cleanliness.

Job Requirements
- High school diploma or equivalent
- Several years of culinary experience in a professional kitchen
- Demonstrated ability to lead a culinary team
- Knowledge of food safety standards and allergen handling
- Ability to work flexible hours including weekends and holidays
- Strong organizational and multitasking skills
- Commitment to maintaining high quality and safety standards
Job Qualifications
- Proven experience in high-volume professional kitchens
- Strong leadership and team management skills
- Experience in creative menu development reflecting seasonal availability
- Ability to mentor and develop culinary staff
- Knowledge of food safety and sanitation regulations
- Excellent communication and interpersonal skills
- Ability to manage food costs effectively
- Passion for culinary arts and hospitality industry
- Previous experience in a Four Diamond or similar upscale property is a plus
Job Duties
- Serve as the face of the restaurant in the hotel and community
- Create, cost, and implement seasonal menus and special menus
- Attract, retain, and mentor the best culinary talent
- Complete daily ordering using current par levels for the restaurant
- Collaborate with the Restaurant Manager to exceed guest expectations
- Train the restaurant culinary and operations team on the menu and daily specials
- Conduct daily walk throughs of the kitchen and make recommendations for corrections, repairs, cleanliness concerns, and improvements
- Hold daily meetings with the team to ensure preparation and communication
- Attend weekly food and beverage meetings, leadership meetings, and monthly safety meetings representing the culinary team
- Manage restaurant costs and analyze to achieve profitable operations
- Handle food allergens and ensure guest safety with allergies
- Ensure prep sheets are updated and used properly
- Guide nightly cleaning of kitchen areas and coordinate with stewarding crew to maintain cleanliness
