Job Requirements

  • Seasoned chef with extensive full service restaurant and fine dining experience
  • Minimum of 3 years experience as a Restaurant Chef at a property of similar caliber
  • Familiarity with hotel operations preferred
  • Proven ability to direct, train and supervise culinary staff
  • Expert knowledge of butchering, sauces, soups, and cooking techniques
  • Ability to work varied schedule including early mornings, weekends and holidays

Job Qualifications

  • Extensive full service restaurant and fine dining experience
  • Educational background in culinary arts or related field
  • Minimum of 3 years experience as a Restaurant Chef at a property of similar caliber
  • Proven ability to manage, train and supervise culinary staff to the highest standards
  • Expert knowledge of all basic culinary skills such as butchering, sauces, soups, cooking techniques of meat, fish and vegetables
  • Ability to work varied schedule including early mornings, weekends and holidays

Job Duties

  • Direct supervision of the day to day operation
  • Understand advanced culinary concepts
  • Build rapport with guests and wait staff
  • Follow instructions and understand the philosophy of the Food & Beverage Director and carry out those ideas, stressing them to culinary staff
  • Work closely with cooks, training, instructing and guiding them in their jobs
  • Emphasize artistic food presentation and quality
  • Control cleanliness and sanitation throughout the kitchen and walk-ins and ensure proper rotation of foods
  • Work closely with service staff to advance their knowledge of menu selections
  • Conduct daily walk through all kitchens, walk-ins for proper rotation of food and sanitation
  • Perform daily routine check of mise en place and quality of food product
  • Perform all other duties as assigned by the Food & Beverage Director
