This position plays a crucial role in managing the operations of 3 Peaks Restaurant's kitchen and back-of-house activities. Reporting directly to the Executive Chef, the role involves ensuring that all kitchen staff adhere to the highest standards of food preparation and guest service. As a key support in administrative and managerial duties, this position acts as the executive chef’s backup when necessary. With a focus on sanitation, safety, and operational procedures, the role requires coaching, training, and motivating kitchen staff to maintain top-quality food presentation, proper ordering processes, and effective inventory control. From scheduling and inventory management to purchasing oversight and waste control, the position demands a well-rounded skill set in culinary leadership and team supervision.

The individual in this role is responsible for maintaining department goals and budgets, coordinating production needs, and ensuring compliance with health and safety regulations. They oversee back-of-house operations by performing regular inspections and delegating tasks to maintain facility standards. Job Requirements

  • High school diploma or GED
  • Culinary degree or ACF certification preferred
  • Eight years of progressive culinary experience
  • Three years of supervisory experience
  • Strong team building and management skills
  • Administrative and scheduling abilities
  • Knowledge of food safety and kitchen operations
  • Ability to work in fast-paced environment
  • State Food Handlers Certification
  • Proficiency in computer and POS software
  • Willingness to mentor tribal members
  • Ability to handle cash accurately
  • Gaming license eligibility
  • Ability to tolerate varying noise, temperature, and smoke levels

Job Qualifications

  • High school diploma or GED
  • Culinary degree or ACF certification preferred
  • At least eight years progressive culinary experience
  • Minimum three years in supervisory or management role such as kitchen supervisor, kitchen manager, or sous chef
  • Strong team building and coaching skills
  • Administrative experience including scheduling, budgeting, and inventory management
  • Knowledge of recipe execution and food quality standards
  • Advanced knowledge of food handling and commercial kitchen operations
  • State Food Handlers Certification
  • Proficient with computers, POS systems, and MS Office
  • Experience with responsible alcohol service
  • Strong guest service and problem-solving skills
  • Ability to obtain and maintain gaming license

Job Duties

  • Ensure all 3 Peaks Restaurant staff maintain excellent standards in food preparation and guest service
  • Assist Executive Chef with managerial duties and serve as back-up
  • Follow sanitation and safety procedures in accordance with policies
  • Train, coach, and motivate kitchen staff on food preparation, presentation, ordering, inventory, and scheduling
  • Supervise all aspects of 3 Peaks back-of-house operations including inspections and delegating responsibilities
  • Monitor food purchasing, staffing, production, and inventory to control costs and waste
  • Assist in menu development and ensure food quality
  • Verify daily log entries, time, and attendance monitoring
  • Communicate effectively with team members and guests
  • Hire, train, evaluate, and supervise staff
  • Maintain cleanliness and health department standards
  • Fill in where needed within the Food and Beverage department
  • Carry out supervisory responsibilities according to company policies including interviewing, hiring, training, performance appraisal, and conflict resolution
