The role of the Chef de Cuisine at Arlo Hotels plays a critical role in the success of the culinary operations. This position oversees the full kitchen operation across all food outlets within the hotel, which include the restaurant, rooftop bar, banquet services, general store, and lobby bar. The Chef de Cuisine is responsible for maintaining high standards of food quality, cleanliness, labor management, and food cost control, ensuring that all operations meet the brand's quality expectations and regulatory requirements. This position is full-time and expects the individual to be a leader who thrives in a fast-paced, high-volume environment, demonstrating strong managerial skills and a passion for culinary excellence. The ideal candidate must maintain a positive and professional kitchen environment, inspire and mentor the culinary team, and work closely with various hotel departments to enhance overall guest satisfaction.

In this role, the Chef de Cuisine will be accountable for scheduling, payroll oversight, inventory management, and product ordering to ensure efficient and cost-effective operations. The role also involves strict compliance with health regulations, specifically maintaining an Illinois Department of Health 'A' level facility, and ensuring all culinary staff have up-to-date Food Handler's permits. The Chef de Cuisine will also be instrumental in recruiting, training, and evaluating kitchen staff, creating a culture of growth and continuous improvement. Effective communication, both written and verbal, is essential to coordinating with suppliers, kitchen staff, and management, and for maintaining detailed records of operations. This position requires a culinary leader who is proactive, detail-oriented, and committed to delivering an extraordinary dining experience that reflects the brand's lifestyle ethos.

Job Requirements

  • Must have 10 years + cooking/management experience in a high-volume restaurant or hotel kitchen
  • Must have 5 years
  • Must be proficient in the English language (both speaking and writing)
  • No smoking while in the workstation
  • Must be able to lift 50 lbs
  • Must be able to stay on your feet for 8 hours plus

Job Qualifications

  • Must have great knife skills in all butchery and knife cuts of any kind
  • Must have extensive knowledge in all aspects of a professional kitchen
  • Must be proficient in Microsoft Word and Excel
  • Must have extensive knowledge of the Illinois Department of Health’s codes and regulations
  • Serve Safe certificate
