Job Requirements

  • High school diploma or equivalent
  • Minimum of 5 years culinary management experience in upscale or luxury hotel environment
  • Proven leadership and team management skills
  • Strong communication abilities
  • Knowledge of sanitation and safety standards
  • Familiarity with budgeting and cost control
  • Flexibility to work varied shifts including weekends and holidays
  • Physical ability to stand for long periods and lift heavy weights
  • Willingness to comply with health and safety regulations
  • Basic computer proficiency

Job Qualifications

  • At least 5 years previous culinary management experience in a high volume, full service Four Diamond kitchen
  • Proven culinary skills with ability to lead, develop and motivate staff
  • Excellent written and verbal communication skills
  • Organizational skills
  • Bilingual (Spanish) preferred but not required
  • Creative and up to speed on new concepts and food trends
  • Experience in busy restaurant environment preferred
  • Computer literate
  • Detail orientated
  • Basic mathematical skills
  • Ability to create and understand financial reports
  • Ability to work flexible schedule including weekends and holidays
  • College education and/or culinary degree preferred

Job Duties

  • Monitor daily production, preparation and presentation of all food for the hotel's restaurant(s) and room service to ensure a quality, consistent product is produced which conforms to all Omni quality and consistency standards
  • Manage associates schedules, training, developing, coaching and counseling, conducting reviews
  • Focus on attracting, interviewing, retaining and motivating associates while providing a safe work environment
  • Conduct daily stand up meetings with associates and monthly OST
  • Ensure team labor productivity and baseline costs align with forecast
  • Monitor, analyze, and control all labor and food costs, prepare reports, charts and schedules to ensure budgets are met or exceeded while maintaining or improving quality
  • Assist the Executive Chef in creating, costing and implementing outlet, in-room dining, bar, poolside, seasonal and special menus
  • Schedule staff according to budget and business forecast
  • Provide kitchen support for banquet functions as needed
  • Oversee proper handling and tracing of buffet food returns at end of meal periods
  • Direct proper sanitation of all kitchen facilities and equipment and maintain all records
  • Comply with EcoSure and health code sanitation standards
  • Work closely with Engineering to ensure all kitchen equipment is in good working order
  • Ensure all mise en place and bulk prep is maintained and team is ready for success at all times
  • Ensure associates are appreciated, properly equipped and confident to communicate needs
  • Direct proper maintenance of walk-in coolers including rotation of food products, hygienic storage practices and cleanliness
  • Work closely with purchasing to maintain par stock for 7 days for all goods required and prevent over/under stocking
  • Understand and execute Executive Chef and Executive Sous Chef expectations within proper guidelines
  • Provide support and leadership to meet Medallia food quality score goals
  • Investigate and follow-up on associate accidents
  • Set positive example for guest relations, interact with guests for feedback and handle complaints effectively
  • Collaborate with In-room dining on daily and special guest amenities as per standards
  • Emphasize guest satisfaction during all departmental meetings and focus on continuous improvement
  • Assist in interviewing and hiring associates with appropriate skills
  • Communicate performance expectations per job descriptions
  • Participate in associate performance appraisals and provide feedback
  • Support departmental orientation and cross-training of associates
  • Maintain flexible availability including weekends and holidays
  • Ensure standard recipe cards, prep sheets and service guides are regularly updated and maintained
  • Check and control sign-in and sign-out procedures for kitchen staff
  • Fix missing time punches before end of each day
  • Prepare team for success during off-shift hours, absences, and vacations
  • Facilitate interdepartmental communication and shift handovers
  • Ensure payroll is closed and all records submitted to paymaster on time
  • Perform any other job-related duties as assigned
