  • excellent knife skills and proficiency in various sushi techniques such as cutting, slicing, rolling, and shaping
  • strong leadership skills with the ability to mentor and motivate a diverse culinary team

Job Duties

  • Leading the culinary team with a supportive teaching style
  • staying current with traditional and western culinary and sushi practices
  • estimating food consumption and managing requisition or purchase of food
  • establishing result-oriented kitchen objectives and personal development goals
  • ensuring profitability and smooth kitchen operations
  • controlling labor costs and creating efficient staff schedules
  • preparing all types of sushi including maki, nigiri, and sashimi
  • executing and standardizing recipes for consistent quality and presentation
  • supervising preparation, presentation, and portion control of all raw and cooked foods
  • conducting daily line checks and quality control in all sushi kitchen areas
  • cutting and preparing fish
  • adapting to changes and adjustments dynamically
  • taking responsibility and maintaining constant motion in the kitchen
