The Chef de Cuisine role within CU Boulder Campus Dining Services is a pivotal culinary leadership position responsible for creating innovative, fresh, high-quality, and on-trend menus spanning multiple restaurant areas on campus. Reporting to the Executive Culinary Team, the Chef de Cuisine helps define operational standards and procedures for various restaurant concepts, including staff management, scheduling, hiring, and training. This leadership position demands a comprehensive understanding of sourcing, procurement, food costs, pricing, labor costs, and overall operational management to align with the fiscal parameters set forth by senior management, including the Associate Director of Culinary and the Senior Executive Chef. The successful candidate will contribute to ensuring that all culinary operations maintain the highest standards of quality, safety, and efficiency while fostering a supportive, inclusive, and dynamic work environment. Job Requirements
- Bachelor's degree or equivalent combination of education and experience may substitute
- State Food Safety certified and/or certificate appropriate for the position level or ability to obtain certification within 6 months of hire
- Must possess State Food Safety certification for the duration of employment
- Ability to work in a fast-paced, team-driven and inclusive environment
- Strong interpersonal, communication, and conflict resolution skills
Job Qualifications
- Bachelor's degree or equivalent combination of education and experience
- State Food Safety certified or ability to obtain certification within 6 months of hire
- Experience in high volume food production

Job Duties
- Assist in design and implementation of menus in assigned area
- Fulfill hands-on production of daily menus as assigned
- Direct work flow of staff and production in assigned area
- Monitor and report on ingredient initiatives set by leadership
- Test and evaluate new food products and recipes
- Provide hands-on training of staff on menu standards, production, equipment use and processes
- Place orders and receive products
- Support development and implementation of quality standards of allergen-free goods
- Ensure food security in all areas of operation
- Ensure operations meet quality, production, safety, and sustainability standards
- Ensure food production meets state and local food code standards and internal food safety standards
- Train staff and monitor food safety and sanitation practices
- Instruct staff on scheduled cleaning of operational areas
- Audit allergen labeling practices and take corrective action
- Provide excellent customer service to internal and external customers
- Audit food safety solutions weekly
- Resolve production issues
- Conduct performance plans for staff and hold others accountable with progressive coaching
- Empower others to make decisions within their span of control
- Ensure all HR processes are followed including injury reporting, leave requests and timekeeping
- Participate in health inspection audits including County Health inspections
- Ensure safe and injury-free work environment
- Participate in assigned duties in food service software
- Serve on food safety response team and respond to food safety emergencies
- Display and demonstrate excellent communication skills
