This role is centered on maintaining the utmost standards of kitchen cleanliness and food handling in accordance with Hilton's rigorous guidelines as well as local health regulations. The position involves comprehensive responsibilities including cleaning, sanitation, food preparation, and inventory management within the kitchen and dining areas. The person in this role will work closely with the steward or other kitchen staff when available to ensure a spotless and safe kitchen environment conducive to efficient food service. Strong attention to detail and adherence to company standards for hygiene and safety are paramount.

Primary duties will focus on various cleaning tasks such as sweeping and mopping the lobby and kitchen floors, emptying trash receptacles, washing dishes, and thoroughly cleaning kitchen equipment including ovens, hood vents, cold wells, and all pertinent fixtures such as stainless steel or brass surfaces. Organizational skills are essential to keep shelving neat and orderly while ensuring all cleaning tasks are executed promptly and efficiently.

Additionally, this role extends to food handling responsibilities such as cooking food to Hilton's precise standards, appropriately rotating perishable items using the FIFO (First In, First Out) method to maintain freshness, and prepping food supplies for the following day including pantry goods. Creativity is also encouraged by developing appealing 'Chef Specials' in collaboration with the Food and Beverage Director, as well as communicating effectively regarding inventory needs and potential food orders. Adherence to dress code policies including wearing company-approved uniforms, name tags, hats, and slip-resistant shoes is mandatory for workplace safety and professionalism.

Overall, this position is a critical support role ensuring that all operational and sanitation protocols are met to deliver an exceptional dining experience for Hilton guests. The Food and Beverage Director oversees this role and retains the ability to modify duties or apply corrective measures to uphold the company's high standards of service and compliance. Job Duties

  • Responsible for the sweeping and mopping the lobby and kitchen
  • empty all trash cans
  • wash all dishes
  • clean all carts
  • clean and detail all kitchen equipment including ovens and hood vent systems
  • detail clean all aspects of kitchen including walls and table legs
  • clean all cold wells along with polishing any stainless or brass fixtures within the kitchen area
  • keep all shelving neat and organized
  • cook food to order by Hilton standards
  • rotate in coming food with old (F.I.F.O first in, first out)
  • prep food for the next day's use including any and all pantry items
  • responsible for coming up with creative ideas for Chef Specials and working in conjunction with Food and Beverage Director to implement them
  • responsible for communicating to the Food and Beverage Director what foods the restaurant is needed or running low on
  • may be required on some occasions to place food orders
  • always wear company approved uniforms with name tags, hats and slip resistant shoes
