We are currently seeking a skilled Sushi Chef/Hibachi Chef to join the Shogun team. This role is perfect for culinary professionals passionate about Japanese cuisine and eager to showcase their expertise in sushi preparation and hibachi cooking. As a Sushi Chef/Hibachi Chef, you will take on multiple responsibilities including menu creation, directing food preparation, ingredient planning, and equipment management. You will play a central role in the kitchen, ensuring that all culinary operations run smoothly, efficiently, and up to the highest standards.

The position demands exceptional leadership abilities as you will be responsible for hiring, managing, and training kitchen staff, fostering a collaborative work environment based on respect and cooperation. Job Requirements

  • High school diploma or equivalent
  • prior experience working in Japanese cuisine kitchens
  • ability to work in a fast-paced environment
  • strong organizational and multitasking skills
  • physical stamina to work standing for long periods
  • flexibility to work evenings, weekends and holidays
  • basic knowledge of kitchen equipment maintenance

Job Duties

  • Create menus
  • Direct the food prep process
  • Plan & order ingredients and necessary equipment
  • Arrange for kitchen repairs when needed
  • Use P&L statements to effectively manage costs and meet budgets
  • Hire, manage, and train kitchen staff
  • Oversee kitchen staff, looking for opportunities to counsel or coach
  • Foster cooperation, collaboration and respect
  • Have knowledge of and enforce all safety and sanitation requirements
