The Culinary Chef role at NotCo is a unique opportunity to work at the crossroads of culinary innovation, food science, and product development. This position focuses on pioneering product innovation through advanced pastry and ingredient techniques, contributing to the development of future-facing food solutions. The role is hands-on and involves both creative execution and exploratory research to transform imaginative culinary ideas into scalable, technically robust products. Located in San Francisco, this position works in close collaboration with the culinary, R&D, and product science teams to ensure each product combines culinary excellence with scientific precision. The Culinary Chef will play an essential role in converting creative direction into validated formulations, optimizing textures, flavors, and structures through rigorous testing and sensory evaluation.

This role is ideal for culinary professionals with at least three years of experience in pastry or confectionery development, preferably within R&D or product innovation environments. Candidates should bring a deep understanding of ingredient functionality such as proteins, fats, sugars, emulsifiers, and stabilizers, and have a proven ability to scale pastry concepts through iterative formulation and sensory testing. The position calls for a proactive and organized mindset, comfortable operating in a dynamic, matrixed global environment with significant travel requirements of up to 50%, including international trips.

Job Requirements

  • Degree or certification in Culinary Arts, Pastry, or related field
  • 3+ years of experience in Culinary R&D or pastry development
  • Strong knowledge of ingredient functionality

Job Qualifications

Job Duties

  • Execution of advanced culinary R&D, translating ingredient functionality, process control, and sensory understanding into scalable products
  • Work from idea to formulation, designing systems that perform consistently across textures, flavors, and formats
  • Convert creative direction and R&D insights into clear, validated formulations ready for testing and iteration
  • Define process parameters and ensure technical accuracy and culinary integrity in every concept
  • Apply rigorous testing and sensory evaluation to optimize flavor, texture, and structure
  • Collaborate closely with food scientists, developers, and culinary peers to connect creative thinking with scientific execution
  • Continuously research and experiment with emerging ingredients, techniques, and technologies
