Job Requirements
- Proven experience in bakery production
- Experience managing teams of at least 10 bakers
- Experience training new bakers
- Experience planning production schedules and sanitation standards
- Ability to troubleshoot recipe and product issues
- Knowledge of pastry and bread baking techniques and equipment
- Must be able to work flexible shifts
- Ability to lift up to 50 lbs safely
- Ability to manage lifting over 70 lbs with assistance or proper methods
- Ability to work in fast-paced, detail-oriented retail environment
- Frequent standing and walking
- Comfortable performing physical tasks such as bending, stooping, and reaching overhead
- Adherence to food safety and sanitation guidelines
Job Qualifications
- Leads team of bakery production partners
- Prefer tortilla production experience
- Preferred graduation from baking or pastry school
- Proven experience in bakery production
- Experience managing teams of at least 10 bakers
- Experience training new bakers to proficiency
- Experience planning production and sanitation standards
- Ability to troubleshoot recipe and product issues
- Knowledge of pastry component manufacturing including buttercream, icings, cooked creams, pate a choux, sponge, and cheesecakes
- Experienced with rack ovens, kettles, and large mixers
- Knowledge of European style bread baking using complex preferment methods
- Experience with deck ovens, bread dividers, and rounders
- Ability to work flexible shifts
