Job Requirements
- Proven experience in bakery production
- Experience managing teams of at least 10 bakers and training new bakers
- Experience planning production and sanitation standards
- Ability to troubleshoot recipe and product issues
- Knowledge of pastry component manufacturing
- Knowledge European style baking using complex preferment
- Ability to work flexible shifts
- Ability to lift up to 50 lbs and manage lifting in excess of 70 lbs with safety protocols
- Ability to work in fast-paced retail environment with attention to detail
- Ability to engage with customers and respond to their needs
- Must adhere to food safety and sanitation regulations
- Comfortable performing physical tasks such as bending, stooping, climbing, pushing and pulling
Job Qualifications
- Lead a team of bakery production partners
- Preferred experience in tortilla production
- Preferred graduation from baking or pastry school
- Proven bakery production experience
- Experience managing teams of at least 10 bakers
- Experience training new bakers to proficiency
- Experience planning production and sanitation standards
- Ability to troubleshoot recipe and product issues
- Knowledge of pastry basics including buttercream, icings, cooked creams and curds, pate a choux, sponge, and cheesecakes
- Experience with rack ovens, kettles, and mixers
- Knowledge of European-style bread baking with preferments like levain and sponge
- Experience with deck ovens, bread dividers, and rounders
- Ability to work flexible shifts
Job Duties
- Use independent judgment in employment and business decisions including hiring, promoting, disciplining, suspending, discharging, and resolving partner-related matters
- Conduct interviews, performance reviews, and provide partner feedback
- Train and develop partners and write department schedules
- Provide superior customer service and lead the team to deliver high-level customer service
- Ensure production schedule and quantities meet forecast
- Maintain product quality, presentation, and stock conditions
- Maintain high product knowledge
- Support Bakery Manager with daily and weekly duties including forecasting and production planning
- Manage product waste effectively
- Monitor product assortment, shrink, labor, and wrap expenses to meet budget goals
- Support product ordering and inventory control
- Plan to meet weekly and long-term budget goals
- Sell products for promotional and special events in the store
- Manage merchandising to maximize sales with proper presentation and promotion
- Maintain vendor relationships
- Ensure compliance with government and company regulations on product freshness, safety, refrigeration, and sanitation
- Organize and rotate coolers
- Work with Food Safety leader to conduct regular assessments and meet safety requirements
