Our in-house food program seeks a dedicated Prep Chef / Catering Sous Chef who will play a pivotal role in maintaining and elevating our culinary standards. This full-time position offers a hands-on opportunity to oversee the complete food production process, from purchasing and preparation through to final plating and presentation. The role centers around the meticulous preparation of our fixed, classic British high tea menu, designed to serve 40-60+ guests per operating day across two tours. This is a highly focused culinary production position requiring precision in baking, assembly, and plating, ensuring each item meets exacting quality and aesthetic standards before being transported to the guest experience venue. The menu features a variety of savory and sweet items including cucumber & radish tea sandwiches, caprese cups, turkey & swiss wraps, salmon crostini, deviled eggs, mini lobster rolls, as well as an assortment of decadent baked goods like brownie bites, mousse cakes, chocolate-dipped strawberries, macarons, scones, cannoli, and cheesecakes. Given the nature of the kitchen setup—with no open flames or grills—the role emphasizes cold prep, oven baking, and assembly techniques, making it ideal for chefs who excel in consistent, high-quality food production rather than fast-paced line cooking. You will be the sole culinary team member responsible for managing purchasing from wholesale suppliers, maintaining inventory, minimizing waste, controlling food costs, and ensuring compliance with strict food safety and sanitation standards as mandated by the Southern Nevada Health District. Your organizational skills will be crucial in balancing batch-prepping items on different schedules, coordinating with the operations manager for daily guest counts, and timing production to have all food perfectly prepared and packaged for the scheduled tour departures. The role also invites creative input for menu improvements and seasonal adjustments while constantly prioritizing presentation and guest satisfaction. Job Requirements

Job Qualifications

- ability to work independently with minimal supervision
- current Southern Nevada Health Card or willingness to obtain within 30 days of hire
- understanding of food cost management, portioning, and waste reduction
- reliable transportation to the kitchen location in Las Vegas
- physically able to stand for extended periods, lift up to 40 lbs, and work in a kitchen environment
- available to work Thursday through Sunday consistently, including holidays and peak tourist weekends
- takes pride in presentation
- experience in catering, banquet production, pastry, or high tea service preferred
- familiarity with British or European tea service traditions and presentation standards preferred
- experience working in a commissary or off-site production kitchen preferred
- ServSafe Manager certification preferred
- experience sourcing from wholesale suppliers and managing food budgets preferred
- culinary degree or certificate from an accredited program helpful but not required
Job Duties
- Prepare the full high tea menu for 40-60+ guests per operating day, ensuring every item meets quality and presentation standards
- manage all food purchasing and ingredient sourcing, including placing orders with wholesale suppliers and maintaining vendor relationships
- maintain accurate inventory, minimize waste, and keep food costs within budget
- batch-prep items efficiently across the weekly schedule
- plate and package all items for transport to the bus departure point, ensuring food arrives in pristine, guest-ready condition
- maintain strict food safety and sanitation standards in compliance with the Southern Nevada Health District
- keep the kitchen clean, organized, and inspection-ready at all times
