The role of Chef at Tatte is a pivotal leadership position responsible for overseeing all kitchen operations at the café level. This position demands a dynamic and experienced culinary professional who can lead a team of up to 25 kitchen employees, including cooks, prep cooks, and dishwashers, while ensuring smooth day-to-day operations within a high-volume, fast-paced environment. The Chef ensures that every dish meets Tatte's rigorous standards for quality, taste, and presentation by following standardized recipes and maintaining portion control. In this role, the Chef will engage, inspire, and mentor their kitchen team to foster an environment of collaboration and continuous development.
The Executive Chef is accountable not only for kitchen execution but also for maintaining inventory levels, enforcing rigorous food safety and sanitation standards in compliance with company policies and regulatory guidelines, and controlling waste through detailed production and waste logs. Hiring, training, and professional development of kitchen staff are key responsibilities, requiring excellent organizational and communication skills. The Chef plays an active role in menu management, including the implementation of seasonal menu changes that keep the offerings fresh and aligned with customer expectations.
Working conditions require flexibility to work days, nights, weekends, and holidays, as well as the physical stamina to perform duties that include standing, walking, lifting up to 50 pounds, and operating kitchen equipment efficiently. Job Requirements
- Minimum 3-5 years' experience of progressive culinary or kitchen management experience depending upon formal degree or training
- proven passion for culinary excellence and exceeding guest expectations
- knowledge and proficiency of systems, methods and processes that contribute to great execution
- excellent verbal and written communication skills with the ability to communicate professionally and effectively
- highly organized with strong attention to detail
- high school education or equivalent
Job Qualifications
- Minimum 3-5 years' progressive culinary and kitchen management experience
- proven passion for culinary excellence and exceeding guest expectations
- knowledge and proficiency of kitchen systems, methods, and processes
- excellent verbal and written communication skills
- highly organized with strong attention to detail
- high school education or equivalent
- preferred BS/AS degree in Culinary Arts, Food Services Technology, Management or related field
- proficiency in Microsoft Office
- experience with UltiPro, Toast POS, CrunchTime, Teamworks preferred
- ServSafe, Allergens, and ChokeSaver certifications preferred
Job Duties
- Run production and service according to established guidelines
- follow standardized recipes, portioning, and presentation standards
- complete and utilize daily production worksheets and waste logs
- taste completed meals to ensure quality
- train kitchen staff in food preparation, safe handling, equipment operation, food safety and sanitation
- establish and maintain cleaning and maintenance schedules
