Job Requirements

  • Ability to work seven (7) days a week for an extended period, including day or night, weekends and holidays
  • While performing the essential functions of this job, all Crew are required to stand, walk long distances on the Ship and may include the repetitive motion of bending, climbing, going up and down the stairs and lifting up to 23 kilograms
  • All Team members must be physically able to participate in emergency life-saving procedures and drills
  • All vessel positions require full use and range of arms and legs as well as full visual, verbal and hearing abilities to receive and give instructions in the event of an emergency including the lowering of lifeboats
  • Work within different temperature changes - indoors to outdoors
  • Ability to pass STCW safety course
  • Able to live harmoniously in close quarters

Job Qualifications

  • Minimum of 3 years relevant experience on a luxury cruise ship, private country club or similar, luxury hotel or resort
  • Good computer skills to include Word, Excel and Outlook
  • working knowledge of inventory management systems and Fidelio
  • Strong knowledge of protein fabrication in regard to composition, structure and quality factors for pork, bee, veal, lamb, poultry, fish and seafood
  • understand American and international specifications and terminology for all protein
  • Able to read, write and speak fluent in English
  • High School Diploma preferred
  • Certification in Sanitation and Public Health preferred

Job Duties

  • Ensure a successful link between the Executive Sous Chef, Butcher shop and Fish room
  • Communicate all changes regarding products to the Executive Sous Chef
  • Adhere to all meat fabrication methods
  • Maintain an organized and efficient flow of production, with regards to changes in forecasts and menus
  • Establish and maintain proper inventories
  • Assist the Crew Sous Chef in maintaining food cost in the Crew galley
  • Adjust daily requisitions to reflect trends and forecasts
  • Complete daily walk-through with the Executive Sous Chef to ensure cleanliness, rotation, and proper labelling, storing, removal and disposal of leftover items
  • Conduct inventory and ordering of all food items
  • Reconcile items upon receipt
  • Assist the Executive Sous Chef in adhering to budget constraints in regard to labor, product and equipment
  • Assist in achieving the budgets by minimizing waste and breakage and maintaining proper handling procedures
  • Exceed Resident and Guest expectations in every aspect of personalized service in accordance with Leading Quality Assurance (LQA) standards
  • Acknowledge Resident’s preferences and ensure all changes are communicated to the team
  • Continue own education by staying abreast of trends and sharing this information with the team
  • Actively support the goals and objectives for the department and adhere to all new policies and company initiatives as assigned
  • Participate in the buddy program
  • Actively participate in Company training as required
  • Maintain accurate Time & Attendance Records for each time period worked
  • Ensure all areas are maintained in accordance with Public Health (HACCP), Safety Management System (SMS) and Safety & Environmental regulations
  • Execute safety duties as per the Emergency Plan and Station Bill
  • Assist with Ship tours, Zodiac landings, Marina days, Expeditions, and other activities when required
