The Overnight Bread Baker role at Theo Brothers Bakery is an essential position responsible for managing the entire overnight production process. This includes preparing doughs and mixes according to precise recipes and production schedules, mixing, bulk fermenting, dividing, shaping, proofing, and baking breads and rolls to the bakery's high standards. The role requires a hands-on approach and the ability to operate and maintain bakery equipment such as mixers, proofers, and ovens safely and efficiently. The baker must monitor temperatures and adjust processes to ensure consistent product quality.
In addition to production duties, the Overnight Bread Baker is responsible for packaging finished products and preparing items for delivery or the morning shift team. Maintaining a clean, sanitary, and well-organized workspace is critical, adhering strictly to food safety and HACCP guidelines to guarantee health and safety compliance. Accurate tracking of production quantities and inventory reporting are also essential parts of the job, ensuring smooth operations and timely restocking.
This position demands reliability, attention to detail, and the ability to work independently during overnight hours from 10:00 PM to 6:00 AM, with some variation depending on production needs. The ideal candidate will have at least one to two years of bread-baking experience, preferably in a commercial or artisan bakery setting, strong knowledge of dough handling, fermentation, scaling, and oven management, and the physical capability to lift up to 50 pounds and perform repetitive tasks requiring prolonged standing. Basic math skills and inventory tracking are necessary, and food safety certification is preferred or the willingness to obtain it is required.
