Job Duties
- Create lifetime guests by delivering uncompromising quality service
- ensure the highest level of food quality and consistency
- maintain clean, safe, profitable, and fun kitchen environment
- lead the chef family in preparing great-tasting Italian food
- manage operational efficiency and EBITDA of all back of house functions
- hire, train, and retain top BOH employees
- develop cooking, food preparation, safety, and sanitation skills in staff
- set and maintain standards to improve food execution and production
- utilize guest feedback to improve satisfaction and food quality
- ensure timely opening and closing BOH duties
- monitor employee punctuality
- oversee ordering, preparation, and stocking based on projected guest counts
- direct and coach managers and employees during food production
- conduct regular menu tastings
- ensure food safety and sanitation compliance
- lead BOH and participate in FOH pre-shifts
- recruit and select outstanding BOH employees
- provide ongoing training, cross-training, and development
- ensure timely performance reviews and counseling
- manage scheduling and labor costs
- control waste and food costs
- perform inventories and food orders
- monitor product receipt and proper storage
- update NBO system to meet efficiency goals
- collaborate with management to increase sales and EBITDA
- model passion and belief in company mission
- lead productive manager meetings
- hold staff accountable with open communication
- provide feedback and training
- take action on performance issues
- demonstrate problem-solving and decision-making skills
- ensure staff have necessary tools
