The trainee period spans 90 days, during which the candidate is expected to become competent across a variety of back-of-house responsibilities, including prep cooking, sushi making, frying, and dishwashing, among others. Job Duties
- Complies with all company policies and procedures
- Maintains kitchen cleanliness and organization consistently
- Ensures proper sanitation of the entire kitchen area
- Works with management to maintain cleanliness of the restaurant's interior and exterior premises
- Ensures customer satisfaction daily
- Follows proper customer service standards
- Manages customer complaints professionally and notifies management
- Attends all pre/post-shift briefings and meetings
- Learns and becomes competent in all duty stations
- Performs prep cook, sushi cook, fry cook, and dishwasher duties
- Efficiently operates all back-of-house stations including fryer, dishwasher, prep, maki, gunkan, nigari, and take-out
- Ensures food is prepared according to company recipes and standards
- Maintains food quality, presentation, and portion control
- Uses FIFO method for food rotation
- Maintains cleanliness, sanitation, and completes side work on time
- Prepares and completes daily opening, mid, and closing duties
- Assists with storing and organizing deliveries
- Follows safe stock levels
- Reports BOH operational issues to management promptly
- Performs other duties as assigned
- Checks and works all scheduled shifts
- Notifies management of personnel changes
- Attends mandatory staff meetings
- Adheres to state OSHA, food, and sanitation requirements
