The role of Bistro Server at HHM Hotels is pivotal to ensuring guests receive courteous, friendly, and high-quality food and beverage service in line with the established brand, hotel guest service, and sustainability standards. This position offers a clear progression path starting from Banquet Server or Captain and advancing through to Restaurant Supervisor, Restaurant Manager, and ultimately Banquet Manager. As a Bistro Server, employees will play a critical role in setting up supplies and maintaining a well-stocked work area, taking and inputting customer orders, handling payments, and communicating special dietary needs to kitchen staff. The role requires flexibility to perform additional food and beverage functions such as bartending or bussing during peak periods or staffing shortages.
Servers at HHM Hotels also hold responsibilities such as preparing food and beverages including coffee and alcoholic drinks when necessary, ensuring compliance with all regulations related to serving alcohol, and maintaining a clean and safe work environment in accordance with MSDS and OSHA standards. The role emphasizes guest satisfaction, safe work habits, and adherence to all company policies. This position is ideal for individuals with prior food and beverage experience or equivalent training who enjoy interacting with people, work well in a fast-paced environment, and are committed to service excellence.

Job Duties
- Set up necessary supplies, food, and beverage at the beginning of the shift and maintain a stocked work area at all times
- Take orders from customers, input orders, obtain payment and provide change
- Communicate additional meal requirements, allergies, dietary needs, and special requests to the kitchen
- Prepare food, coffee and other beverages, including alcohol, when necessary
- Prepare ingredients for cooking, including portioning, chopping, and storing food, when necessary
- Perform other food and beverage functions such as bartending and bussing in the event of staff staffing shortages or peak periods
- Count bank at end of shift, complete designated cashier reports, resolve any discrepancies, drop off receipts, and secure bank in accordance with established policies
