The Beverage Manager role at Fontainebleau Las Vegas is an opportunity for an experienced and motivated professional to lead and oversee the beverage service operations within the resort’s designated venues. This full-time position offers an annual salary range between $65,000 and $75,000, commensurate with experience and skill set. Job Requirements
- Must be at least 21 years of age
- High school diploma or equivalent
- Minimum three years of supervisory food and beverage management experience
- Knowledge of cocktail, beverage and lounge/bar operations
- Knowledge of health and safety regulations
- Basic Microsoft Office skills
- Acceptable leadership and mentoring abilities
- Excellent interpersonal and communication skills
- Ability to work flexible schedules including holidays, nights, and weekends
- Ability to operate in fast-paced, stressful environment
- Ability to comply with licensing requirements
- Effective organizational skills and attention to detail
Job Qualifications
- High school diploma or equivalent
- Minimum of three years in food and beverage management in a supervisory capacity preferably in high-volume beverage operations
- Demonstrated knowledge of cocktail, beverage, lounge, and bar operations
- Complete knowledge of health and safety regulations
- Basic knowledge of Microsoft Office software
- Extensive cocktail program technical knowledge and current culinary trends
- Understanding and compliance with policies and procedures including health and safety, sanitation, chemical usage, fire procedures, and HACCP
- Ability to optimize staffing to maximize efficiency and minimize labor costs
- Strong knowledge of drink menu preparation and presentation
- Proficient in financial management and budgeting
- Excellent interpersonal skills

Job Duties
- Provide exceptional guest service by greeting guests warmly and professionally and anticipating their needs
- Oversee the conceptual elements of each venue’s operation including service style, ambience, and menu design
- Assist in managing ordering and maintaining par levels for each beverage outlet
- Manage health and safety requirements according to division standards
- Monitor drink preparation, presentation, and guest interactions to ensure quality
- Respond quickly and effectively to guest questions, requests, problems, and complaints
- Maintain knowledge of the resort and provide proactive assistance to guests
- Manage business finances to meet budget guidelines while maintaining quality standards
- Demonstrate departmental knowledge and efficiency
- Ensure staff grooming and professionalism
- Maintain good safety practices
- Report facility and equipment malfunctions
- Conduct department orientation, line-ups, and training
- Ensure thorough understanding of food and beverage menus by staff
- Forecast staffing needs and prepare work rosters
