The Beverage Director position at HHM Hotels offers a dynamic and influential role within the food and beverage department. This full-time leadership position is charged with overseeing and strategizing all operations of beverage outlets and services across the companys properties. The Beverage Director will be responsible for the comprehensive management of beverage functions including the careful selection and purchasing of beverages, the development of creative menus and promotions, and maintaining customer satisfaction through consistent quality and service excellence. In addition, the Beverage Director will develop and curate a sophisticated wine and spirits program that encompasses spirit selection, specialty cocktails, and wine lists, emphasizing the harmony between food and beverage offerings. The role entails maintaining strict adherence to sanitation and safety standards for both guests and associates while managing purchasing, storage, receiving, requisitioning, and inventory control systems to optimize operational efficiency and cost control. Close collaboration with executive chefs, restaurant general managers, and senior leadership is essential to analyze product mix and cost of goods sold (CoGS) and identify opportunities for financial improvement.
A significant component of this leadership role involves vendor and distributor coordination to maximize purchasing power and obtain return incentives through compliance programs, volume deals, private labels, pricing agreements, and special buys. The Beverage Director will also have responsibility for initial and ongoing staff training for front-of-house personnel, reinforcing educational standards and compliance with all state, federal, and corporate regulations related to alcoholic beverage service. This role demands hands-on involvement during busy periods or staffing shortages, requiring flexibility and dedication.
Sustainability is also a key focus area, with the Beverage Director expected to follow HHMs EarthView sustainability guidelines and practices. Promoting a culture of safety and adherence to MSDS and OSHA standards is essential to maintain a safe work environment. The Beverage Director will perform other duties as assigned, contributing broadly to the success of the food and beverage division.

- Minimum five years of management experience in a high-volume beverage program coupled with food service
- knowledge of State, Federal, and local liquor laws
- knowledge of bar service and liquor inventory controls
- extensive knowledge of wine, spirits, beverage characteristics, and food pairing strongly preferred
- ability to work varied shifts, including holidays and weekends
- physical capability to stand for extended periods, walk, push, lift up to 50 pounds, bend, reach, stoop, kneel, or crouch

Job Duties
- Coordinate beverage programs including decisions on glass pours, compliance programs, volume purchases, allocations, promotions, and features
- maintaining consistent quality, appealing display, and preparation to guest satisfaction
- develop and curate wine and spirits program including spirit selection, specialty cocktails, and wine list emphasizing harmony of food and beverage
- ensure bar and beverage services comply with sanitation and safety standards for guests and associates
- responsible for synergizing all purchasing, storage, receiving, requisitioning, and inventory control systems
- analyze product mix and Cost of Goods Sold (CoGS) for each outlet, collaborating with Executive Chef, Restaurant GM and SVP of Restaurants and Bars to improve areas of opportunity
- coordinate with vendors and distributors to maximize purchasing power and return incentives, including compliance programs, volume purchase deals, special buys, private labels, pricing agreements
- interact with guests to obtain feedback on quality of product and service in outlets
- responsible for initial and continued beverage training for all FOH staff, upholding all standards of education
- perform service functions during periods of high volume or staffing shortages
- establish staff training that abides by State, Federal, and Corporate requirements pertaining to serving alcoholic beverages
- follow sustainability guidelines and practices related to HHM's EarthView program
