Job Requirements
- Must possess a valid Yavapai County Health Dept. Food Handlers card
- Must have completed County and State Liquor training
- Proper professional attire required following appearance guidelines
- Appearance must always be neat, clean, and professional
Job Qualifications
- Previous bartender experience with working wine and spirits knowledge
- Must have a keen attention to detail
- Pleasant personality to effectively deal with guest questions and service and contribute to teamwork
- Sincere desire to provide the utmost in guest service with good communication skills
- Good physical condition to remain on feet for prolonged periods
- Ability to properly lift, move and carry products weighing more than 75lb and know when to seek assistance
- Ability to walk up a footstool to obtain and store liquor bottles in overhead cabinets
- Ability to bend down repeatedly to store and obtain beverages from coolers
- Ability to operate glass washing machine
- Ability to have hands in ice, detergent, and water continuously
- Ability to work in high noise level environments and maintain guest service
- Ability to work outdoors in extreme temperatures
- Adherence to occupational safety and health practices including personal protective equipment
Job Duties
- Be thoroughly familiar with all standards of proper service etiquette and adhere to these standards throughout guest service
- Be aware of all local liquor laws as well as company and departmental policies regarding the consumption of alcoholic beverages
- Know all spirited beverages, cigars, and wines by the glass available
- Familiar with the wine list and able to talk about regions, styles, and varietals of wines offered
- Know all drink recipes including garnishes, glassware to be used, and specific service, and consistently use recipes during production
- Know all drink prices and consistently use these prices during service
- Have a strong working knowledge of the Micros ordering system and other check processing procedures
- Familiar with requisitioning, receiving, rotation, and stocking procedures of all beverage items
- Familiar with emergency safety measures including the Heimlich maneuver and fire evacuation procedures
- Review bartender production stations to ensure they are completely stocked for quick and efficient service to guests and the restaurant
- Fill all ice bins throughout service
- Set up glasswasher with appropriate detergents and sanitizing solutions
- Requisition and stock cleaning chemicals as needed
- Inform manager of any problems with beer, soda, or liquor dispensing systems
- Produce drinks as ordered by restaurant servers through the Micros system
- Enter all direct guest orders into the P.O.S. system before production, maintain guest orders in Micros, and present the final check to guests
- Obtain service report from Micros system and finalize all settlement transactions
- Use "bar brands" as specified when "call brands" are not requested by guests
- Replace drinks in the event of guest complaints and record incidents on the bad drink/spillage log, submitting with closing paperwork
- Maintain the bar area in a neat and clean manner throughout service
- Complete tasks designated before and after service
- Work special group functions as required
- Perform special duties as requested by food and beverage supervisors
- Attend scheduled staff meetings and training sessions including on-premise educational programs, wine tastings, and daily pre-service meetings
