Job Description

The Whaling Bar is an innovative and newly reimagined bar that blends the sophistication of fine dining with an exceptional cocktail program inspired by the finest speakeasies. We are currently seeking a motivated and reliable Barback to join our dynamic team. This position is unique compared to typical barback roles, as it serves as a Bartender apprenticeship designed for individuals with aspirations to become outstanding bartenders. The role involves essential support tasks that maintain the smooth operation of the bar while providing invaluable learning opportunities in bartending skills, techniques, and cocktail knowledge. The Barback will work closely with the bar staff, learning the intricacies of cocktail preparation, stock management, and maintaining high standards of cleanliness and organization throughout the service.

As a key team member, the Barback will be responsible for ensuring that the bar is fully stocked with all necessary ingredients, glassware, and accessories before, during, and after service hours. Responsibilities include preparing intricate syrups and batches through detailed recipes and precise methods, maintaining garnishes, replenishing ice wells, and assisting with beer keg changes. The Barback is also expected to handle various operational and emergency situations swiftly and professionally, including cleaning up spills and broken glass, managing clogged drains, and assisting guests when needed.

This position requires strong physical stamina as it involves standing for extended periods and performing occasional heavy lifting. The ideal candidate should be enthusiastic about learning and developing a career behind the bar while contributing positively to a collaborative team environment.   • Previous bar or restaurant experience preferred

Job Duties

  • Keep the bar stocked with liquor, syrups, glasses, napkins, and all other necessary items before, during and at the end of service hours
  • Constantly keep up with clean glassware and polishing
  • Prepare garnishes, refill ice wells, change beer kegs and restock napkins and straws
  • Make syrups and batches by method of cooking and vacuum sealing
  • Record pars and consistently keep up with spreadsheets
  • Clean up spills, remove glassware and organize the counter
  • Greet and refill water for guests and reset mise en place
  • Keep the bar area neat and clean
  • Handle emergency situations like cleaning up broken glasses and clearing clogged drains
  • Occasionally pour beer or wine for guests when asked by a manager
  • Order produce, garnishes, non-alcoholic beverages, purees, and syrups according to pars without over or under ordering
  • Be available to work 8 or more hours on your feet with occasional heavy lifting and constant side work
