Job Requirements
- Advanced knowledge of culinary practices and techniques
- Ability to determine course of action based on policies and procedures
- Formal education of high school diploma or higher
- Culinary degree or ACF certification preferred
- Serve Safe Managers certification
- Ability to work standing for extended periods
- Capability to lift/carry weights up to 70 lbs
- Strong manual dexterity and fine motor skills
- Ability to work in various environmental conditions both indoor and outdoor
- Compliance with company policies and safety standards
- Effective verbal and written communication skills
- Teamwork and cross-departmental collaboration skills
Job Qualifications
- High school diploma or higher
- Culinary degree or ACF certification preferred
- Experience in catering and banquet food preparation
- Strong leadership and communication skills
- Ability to manage schedules and coordinate teams
- Knowledge of food safety standards including HACCP
- Experience in menu development and recipe costing
- Familiarity with kitchen equipment and maintenance practices
- Ability to foster teamwork and a positive work environment
- Ability to maintain high service standards
- Skilled in problem-solving and delegation
Job Duties
- Assist in periodic food inventories
- Communicate and oversee food and supplies ordering
- Supervise and coordinate production of food according to menu specifications and culinary training
- Assist the chefs and the cooks in the preparation of certain cuisine
- Inspect the quality of food products used in the cuisine and inform the chef when the quality is unacceptable
- Ensure all cuisine served to guests follows established guidelines for portions, quantities, quality, appearance, and palatability
- Check the physical cleanliness of operations, ensuring all staff practice clean-as-you-go techniques
- Maintain proper working order of all equipment and inspect ovens, burners, water faucets, and refrigerators
- Report all deficiencies to the chef and engineering
- Perform chef or sous chef duties in the absence of the chefs
- Deliver "I Am Proud" service standards and department-specific signature touch points
- Establish cross-departmental communication channels among teammates
- Actively prepare and manage culinary team schedules, ensuring proper coverage
- Effectively contribute to the creative menu development, engineering, and conceptualization process
- Successfully create recipes for all menu dishes with complete costing and pricing recommendations
- Foster a collaborative work environment with all stakeholders
- Participate in recruitment, hiring, training, development, and mentorship of culinary team members
- Champion a culture of excellence
- Adhere to all food codes and HACCP
- Greet every guest, member, and team member with "I Am Proud" standards
- Provide extraordinary service that is "Enriching by Nature"
