The Banquet Chef role at The Guest House at Graceland offers a unique opportunity to join this iconic establishment during an exciting time of growth. This full-time position requires variable and flexible working hours, including weekends, holidays, evenings, and overtime as needed. The Banquet Chef plays a key leadership position reporting directly to the Executive Chef/Director of Food & Beverage. This role is responsible for overseeing all culinary aspects of banquet and catering functions, ensuring the highest quality food preparation and presentation that aligns with Graceland's esteemed reputation.
The successful applicant will be instrumental in planning, implementing, and managing day-to-day banquet operations, including creating innovative menu selections for special events. They will maintain food safety standards rigorously while maximizing departmental profitability and guest satisfaction. The Banquet Chef has a crucial role in directing culinary associates, managing schedules, and fostering a collaborative, professional kitchen environment.
Moreover, this role involves controlling operational metrics such as food costs, payroll management, sanitation, and maintaining overall kitchen cleanliness and hygiene. Job Requirements
- High school diploma or equivalent
- experience managing banquet or catering operations
- ability to cope with heavy workload
- Serve-Safe certification or willingness to become certified
- ability to stoop, reach, walk and stand for long periods
- ability to lift boxes up to forty pounds
- ability to speak clearly and distinctly
- ability to work variable hours including weekends, holidays, evenings, and overtime
- must follow health codes
- possession or willingness to apply for an ABC Card and Beer Card
- ability to wear uniform and hair net in food production areas
- willingness to work in a non-smoking environment
Job Qualifications
- Management experience in full service banquets, dining, or catering

Job Duties
- Plan and oversee day-to-day banquet culinary operations
- give direction to associates
- create and implement menu selections for special banquet themes and events
- ensure consistency in the preparation of all food items according to hotel recipes and standards
- follow all safety and sanitation policies
- contribute to maximizing the overall departmental profit
- control and analyze quality levels of production and presentation and guest satisfaction
- manage merchandising and marketing
- oversee operation, payroll, food costs, sanitation, and cleanliness
- assist in monitoring and developing team member performance including supervision, coaching, counseling, evaluation, training, scheduling, assigning work, and recognition
- participate in the development of kitchen business strategies
- supervise daily setup for menu
- anticipate business volume and adjust work areas and schedules accordingly
- manage time effectively and efficiently
- establish and maintain effective employee relations and interdepartmental working relationships
- perform additional duties as assigned
