- Expertise in garde manger, savory and pastry exposure
- Ability to handle multiple events simultaneously
- Menu planning and execution skills
- Strong organizational and communication skills
- Knowledge of full-service hotel environment with over 600 guest rooms
- Ability to monitor and control food and labor costs
- Scheduling and ordering proficiency
Job Qualifications
- Leadership experience in professional banquet kitchens within high-end hotel or resort environments
- Skills in garde manger, savory cooking, and some pastry preparation
- Strong menu planning and execution skills
- Excellent organizational and communication abilities
- Experience working in full-service hotels with large guest room capacities
- Ability to manage costs including food and labor
- Expertise in food safety and sanitation practices
- Budget management and inventory control experience
- Proven ability to lead and motivate kitchen teams under pressure
Job Duties
- Collaborate with Executive Chef and cross-functional departments to plan and execute banquet events
- Manage multiple banquet and catering events concurrently ensuring high-quality food preparation and presentation
- Develop and implement menu plans, prep lists, and detailed game plans for event execution
- Oversee kitchen staff performance and provide leadership in a high-volume banquet kitchen
- Monitor and control food and labor costs, scheduling staff efficiently and ordering supplies appropriately
- Ensure compliance with food safety, sanitation, and HACCP standards
- Maintain strong organizational and communication channels to support seamless event delivery
