Job Requirements

  • High school diploma or equivalent
  • Minimum of 3 years banquet experience
  • Knowledge of banquet menus and prices
  • Ability to work flexible schedule including weekends and holidays
  • Ability to stand for long periods
  • Ability to push, stand, stoop, bend, and lift items weighing up to 50 pounds repetitively

Job Duties

  • Supervises Banquet staff in the completion of the assigned functions and set-up as well as oversee the service and breakdown of events in a safe manner
  • May be requested to attend weekly BEO meetings and discuss plan of action for events
  • Inform staff of specific needs for buffets and receptions
  • Review banquet event orders and communicate with the meeting/event planner to ensure all needs have been met and check for any last minute instructions or changes
  • See that all scheduled functions take place on time and according to plan with all rooms ready at least 30 minutes before time on the BEO
  • Conduct pre-function meetings to ensure personal hygiene and appearance standards of staff are met
  • Check-in servers, assign stations, and pre-post function side work duties
  • Inspect proper setting of buffet tables, food service tables, table place settings including table linen, china, glass, silverware, and condiments for correct placement and cleanliness
  • Confirm that table complements have been properly filled
  • Continuously monitor work station, refilling beverages, removing service items and condiments
  • Assist with set-up and maintenance of audio/visual as necessary
  • Responsible for all servers on the floor and supervise services received by guests throughout each assigned function
  • Maintain proper control over banquet beverage service in accordance with regulations and laws
  • Inspect sanitation of all function space and storage areas
  • Prepare daily summary and submit to Night Audit with all completed banquet checks
  • Train and develop back-up personnel for the position of Banquet Captain
  • Provide leadership and direction to Banquet staff as directed by Management
  • Maintain constant contact with Banquet Chef for communication between food production and service
  • Monitor and maintain cleanliness, sanitation and organization of assigned work areas
  • Supervise clearing and post function clean-up
  • Verify servers' paperwork and check out servers ensuring function rooms and storage areas are clean and equipment is properly stored
  • Provide excellent customer service and service recovery when necessary
  • Resolve guest relation problems skillfully within Company policies
  • Be knowledgeable of emergency/fire evacuation and safety procedures and train staff as needed
  • Provide timely weekly work schedules for Banquet staff
