The Baking and Pastry Manager position at Norfolk Botanical Garden is a full-time role with 40 hours per week and is classified as non-exempt under the Fair Labor Standards Act (FLSA). This key leadership position is responsible for overseeing all baking and pastry operations within the garden’s bustling café and event spaces. The manager develops and leads a high-quality, scratch-made baking program that supports the daily café service, including breakfast and lunch offerings, seasonal menus, and special garden events. This role requires a combination of strong technical baking skills, creativity inspired by seasonal and garden-grown ingredients, and a passion to ensure every baked item meets excellent standards of consistency, flavor, and presentation.

The Baking and Pastry Manager works closely with culinary and front-of-house teams to integrate the bakery’s offerings with savory menu items and beverages, reinforcing the garden’s culinary vision. Responsibilities include managing daily production schedules, minimizing waste, maintaining compliance with food safety and sanitation standards, and supervising and mentoring bakery staff through hiring, training, and performance management. Attention to detail in recipe standardization, inventory control, and equipment maintenance are essential for success.

Additionally, the manager plays a role in supporting special events, catering, and seasonal programming that Norfolk Botanical Garden hosts, contributing ideas for limited-time and signature items that reflect the garden’s mission and highlight local ingredients and sustainability principles. Job Requirements

  • Minimum of 3-5 years of professional baking experience
  • At least 1-2 years in a leadership role
  • Ability to work flexible hours including early mornings, weekends, and holidays
  • Ability to stand for extended periods, bend, stoop, and lift up to 50 pounds
  • Knowledge of food safety standards and regulations
  • Culinary degree or formal training

  • Strong knowledge of high-volume scratch production, pastry, and classic baking techniques

Job Duties

  • Prepare and oversee daily production of breads, pastries, viennoiserie, desserts, and baked goods for breakfast, lunch, and café service
  • Develop and execute seasonal baking menus that reflect the Garden's mission, local ingredients, and culinary vision
  • Ensure consistent quality, flavor, freshness, and presentation of all baked items
  • Manage production schedules to meet service needs while minimizing waste
  • Interview, hire, assign work, and manage bakery staff development including annual reviews and performance management
  • Provide supervision, mentorship, and on-the-job training to team members
  • Implement and uphold standardized recipes, prep lists, and production schedules to maintain consistent food quality, presentation, and portion control
  • Manage inventory, ordering, and proper storage of baking equipment, ingredients, and supplies while maintaining compliance with food safety, sanitation, and health standards
  • Monitor food and labor costs within established budget guidelines
  • Maintain bakery equipment and coordinate maintenance or repairs as needed
  • Assist with food cost control, inventory management, and waste reduction
  • Collaborate with Chef de Cuisine and Front of House team to complement savory menus and beverage offerings
  • Support special events, catering, and seasonal programs at Norfolk Botanical Garden
  • Contribute ideas for limited-time offerings, holidays, and Garden-inspired signature items
