Job Duties
- Lead baking operations and set the pace for bakers
- assign tasks, prioritize workflow, and adjust production to meet service demands
- evaluate quality, procedures, and uphold standards with Pastry Chef and Ownership team
- ensure recipes, timelines, and production standards are followed
- act as main communication point between night and daytime bakery teams
- hold bakers accountable and provide feedback
- scale and mix doughs and batters per standardized recipes
- monitor mixing times, dough temperatures, and fermentation
- operate and maintain mixers
- train bakers on procedures
- divide, shape, proof, and bake breads
- manage fermentation schedules and oven loads
- evaluate bake quality and adjust as needed
- train staff on fermentation and recipes
- portion, shape, and bake cookies and other baked goods
- prepare enriched or laminated products
- oversee slicing, cooling, labeling, packaging, and staging
- organize storage to support efficient morning handoff
- verify counts and completeness
- uphold food safety and sanitation standards
- inspect products for quality
- communicate issues to leadership
- safely operate and clean bakery equipment
- perform equipment checks and report concerns
- support onboarding and training of new bakers
- provide feedback and foster team-oriented environment
