Job Requirements

  • Full-time onsite in our SLC test kitchen
  • stand for extended periods
  • lift up to ~50 lbs as needed
  • typical daytime hours with flexibility for pilot/production days and seasonal launches

Job Qualifications

  • 2+ years in pastry/bakery production or culinary R&D (cookies/desserts a plus)
  • clear recipe writing
  • comfortable with spreadsheets and basic math for scaling
  • detail-obsessed including labeling, timing trials, and following procedures
  • proficient with scales and thermometers
  • open to learning water activity and texture basics
  • culinary/pastry diploma or food-science coursework preferred
  • exposure to HACCP, FSQ, shelf-life basics, or packaging evaluations preferred
  • strong communication and photo documentation skills (smartphone is fine)

Job Duties

  • Mix, bake, and iterate cookie/bakery trials each month
  • track variables such as temps, times, weights, and yields
  • write clean formulas and methods with scaling notes
  • attach in-process and finished photos
  • maintain change logs
  • record unit weights/size, bake color, and texture
  • assist with water activity and moisture reads
  • set up simple sensory tests such as triangle and paired
  • build batch sheets
  • organize mise en place
  • assist with SOPs for pilot/production runs
  • maintain a sample library
  • coordinate vendor samples and COAs
  • manage retains and labeling notes
  • perform occasional store/plant check-ins
  • document issues and hand off to owners
