Job Description

The role of Baker 3 at King’s Hawaiian is vital within the production team, reporting directly to the Production Manager and Commissary Bakery Chef. This position involves leadership and hands-on involvement in producing a wide array of bakery products daily. The Baker 3 is responsible for overseeing various production areas, guiding team members, managing complex recipes, operating bakery equipment, and ensuring that all food handling and sanitation standards are rigorously followed. This role requires the ability to prepare diverse baked goods such as breads, rolls, muffins, cakes, cookies, pastries, and more, ensuring they meet the company’s high-quality standards.
Working in shifts primarily from Monday to Saturday with Sundays and one additional day off, the Baker 3 operates in a fast-paced production environment. Standard shifts range from 4 PM to 6 PM with eight-hour hours, and there is potential overtime during busy seasons. Key responsibilities include mixing and baking batters, laminating dough, managing both baked and unbaked inventory, and maintaining accurate records such as temperature logs and production sheets. This position also involves problem-solving to address production issues and improve efficiency while maintaining strict adherence to food safety and sanitation regulations.
In addition to production duties, the Baker 3 plays a significant role in coordinating bakery deliveries, ordering supplies, training staff, and communicating production schedules to ensure seamless operations. The position demands physical stamina, as candidates need to stand and walk for extended periods and lift varying weights regularly. Job Requirements
- high school diploma or ged
- 5 to 7 years of work experience with yeast doughs and a variety of cake batters
- valid food handler's certificate
- prior experience coaching and developing others
- ability to think critically adapt and collaborate
- operate with a high level of emotional intelligence and initiative
- ability to stand and walk for extended periods
- ability to regularly lift up to 10 lbs frequently lift up to 25 lbs and occasionally lift up to 50 lbs

Job Duties
- assist production manager and commissary bakery chef to create baked goods following recipes
- identify and troubleshoot production issues
- mix and deposit batters into pans for baking
- operate baking machinery including ovens and wrapping machines
- set controls for mixing and blending machines
- deliver prepared product for baking
- remove finished products from pans
- prepare orders for delivery
- manage baked and unbaked inventories including tracking expiration dates
- regulate oven drafts and temperatures while monitoring product quality
- combine ingredients for mixing
- laminate various doughs
- manage pars, quality, and efficiency of product creation
- measure and weigh ingredients
- check quality of raw materials
- adapt ingredient quantities
- roll, knead, cut, or shape dough to form products
- coordinate bakery deliveries
- order and receive supplies
- report inconsistencies to management
- develop process controls and train staff
