The Baker position at Brown University Dining Services is a full-time, regular employee role, working 40 scheduled hours per week onsite at the university. This role is integral to the production team and works under supervision to prepare a wide variety of baked goods and desserts for both dining room menus and catered functions. The position requires expertise in fundamental culinary baking techniques, the use of diverse flours, leavening and thickening agents, and the preparation of doughs, batters, fillings, puddings, and frostings. Additionally, the Baker must possess working knowledge of specialized pastry doughs such as Danish Puff Paste and Cream Puff Dough, along with recipe formulation and precise oven management.
This position involves not only preparing food with speed and efficiency but also adhering strictly to safety and sanitation protocols. The awarded employee will be expected to maintain a clean and organized work environment and demonstrate a commitment to food safety by preventing foodborne illness through proper handling and storage of ingredients. Maintenance of kitchen equipment, including proper cleaning, sanitization, and minor repairs, falls within the role's responsibilities. The Baker will collaborate with team members, ensuring effective communication and cooperation to uphold the quality and standards expected by Brown Dining Services.
Candidates should have at least one year of experience as a Baker's Helper or equivalent, demonstrating mastery of fundamental scratch baking functions, with post-secondary culinary education preferred. Excellent English communication skills are required, alongside proficiency in measurements and conversions related to baking recipes. Physical stamina to stand for extended periods and the ability to perform tasks involving lifting, bending, and operating specialized kitchen equipment is essential. This role also demands strict adherence to personal protective equipment guidelines, including the use of cut-resistant gloves when handling sharp instruments.

Job Requirements
- Ability to read, write and communicate effectively in English
- Ability to understand symbols of weight and measure and to mathematically convert volume and weight measures in recipes
- One-year experience as Baker's Helper or equivalent
- Two years of post-secondary Culinary School attendance preferred
- Neat and clean appearance
- Ability to stand for extended periods
- Ability to lift or move products and supplies up to 50 pounds
- Ability to push or pull carts weighing up to 75 pounds
- Ability to perform tasks with speed, efficiency, safety and accuracy
- Ability to tolerate extreme heat and cold
- Ability to operate assigned equipment correctly and safely
- Consistent use of Personal Protective Equipment
- Must wear cut resistance glove when using sharp tools
Job Qualifications

Job Duties
- Produce all baked goods and desserts using proper culinary techniques
- Use different types of flour, leavening and thickening agents
- Scale and mix doughs, batters, fillings, puddings and frostings
- Maintain knowledge and work with Danish Puff Paste and Cream Puff Dough
- Follow recipe formulation and oven work accurately
- Practice proper storage of baked or unbaked items, frostings, fillings, creams, glazes and syrups
- Perform all bench work tasks with speed and efficiency
- Understand organizational structure and reporting relationships
- Interact with operating units and requisition and transfer goods
- Follow standardized recipes and procedures
- Observe holding and serving times and temperatures
- Coordinate efforts of others and assist subordinates
- Observe maximum safety precautions
- Disassemble, clean and sanitize all kitchen equipment
- Maintain an uncluttered and sanitary work area
- Practice correct food handling procedures
- Operate all Bake Shop equipment and perform basic maintenance
- Report equipment malfunctions and repairs
- Observe all policies and procedures of the Bake Shop and department
- Improve skills by learning tasks of Second Baker
- Practice effective teamwork and maintain professional appearance
- Perform additional tasks as requested
