The role of Panadero (Baker) at Schlotzsky's is critical to the success of the bakery operations within the restaurant. This position involves baking fresh breads and pizza dough daily while ensuring that the quality of the bread and crust strictly meets appearance and texture guidelines. Bakers are expected to adhere closely to recipes and production standards to consistently deliver high-quality bakery products. In addition to baking, the Panadero is responsible for maintaining a clean workstation, accurately preparing batches according to daily order sheets, assisting management with inventory and baking schedules, and complying with all safety and health regulations including OSHA and SERVSAFE standards. This role requires multitasking skills, physical stamina to handle lifting and repetitive movements, and the ability to work independently and as part of a team. The position operates within a corporate location of Schlotzsky's where maintaining brand standards and contributing to customer satisfaction are key priorities. Job Requirements

  • Must be at least 18 years old to operate certain bakery equipment
  • must be entrepreneurial and able to work independently
  • must have multitasking skills to coordinate multiple tasks during various stages of the baking process
  • essential functions include lifting and carrying up to 50 pounds
  • folding and lifting heavy dough tubs to and from fermentation chamber
  • performing repetitive gripping and flexing of arms and hands
  • working near extremely hot equipment and handling hot pans with baking gloves
  • lifting and turning body repeatedly while sliding baking trays in and out of fermentation chamber and bakery oven
  • standing during scheduled shift
  • bending, reaching, and kneeling to access certain products or clean designated restaurant areas
  • comply with strict safety and sanitation standards
  • arrive to work on time for each scheduled shift
  • adhere to all uniform and personal grooming standards
  • familiarize with and adhere to all company policies and procedures
  • maintain a positive and smiling demeanor at all times

Job Qualifications

  • High school diploma or equivalent preferred
  • previous baking experience in a commercial bakery or restaurant setting
  • knowledge of baking techniques and food safety standards
  • ability to work independently and multitask effectively
  • strong attention to detail and precision in measuring ingredients
  • familiarity with OSHA and SERVSAFE standards
  • good physical stamina and ability to handle repetitive tasks
  • reliable and punctual work ethic

Job Duties

  • Bake batches according to needs shown on daily par baking/order sheets
  • consistently produce high-quality bakery product
  • be extremely precise with weights and measures of all recipe ingredients
  • maintain a clean workstation at all times
  • properly clean all pans and trays during shift (minimum 30 trays per day)
  • assist managers in determining current and required bread levels and baking sequence
  • strictly comply with all bakery safety and health code requirements including OSHA and SERVSAFE guidelines
  • complete all baking tasks timely
