Reporting to the First Baker and Pastry Chef, this position plays a key role in preparing ingredients, scaling recipes, and finishing products according to standard procedures to meet production demands. The Baker is also responsible for ensuring ingredient freshness, maintaining proper temperature controls, and following all health and safety regulations. Additionally, maintaining cleanliness of the workspace and kitchen is crucial for operational efficiency and food safety. This role requires physical stamina to adhere to baking processes that often involve lifting, standing for extended periods, and handling various kitchen equipment.\n\nSuccess in this position is measured by adherence to quality standards, punctual attendance, and active participation in team communication activities including daily meetings and training. The Baker must display the ability to convert formulas for different batch sizes, a thorough understanding of baking ingredients and techniques, and a commitment to the organization’s standards. In the performance of duties, the Baker supports the mission of Pueblo of Sandia by ensuring customers receive high-quality baked goods that meet or exceed expectations. This role offers a dynamic work environment with opportunities to work both indoors and outdoors, under varying conditions, and requires flexibility in scheduling including weekends and holidays. The position involves compliance with a New Mexico Food Handlers certification, background checks, and drug screenings. Job Requirements
- Must successfully complete a New Mexico Food Handlers Course within 30 days of hire date
- must be able to successfully pass a stringent background investigation
- will require a pre-employment and random drug screening
- high school diploma, GED certification or equivalent
- one year of experience in high volume hotel, restaurant or food service in production of pastries, desserts and baked goods
- ability to lift and carry at least 40 lbs at one time
- ability to work a flexible schedule including weekends and holidays
- punctual and regular attendance in accordance with attendance policy
Job Qualifications
- High school diploma, GED certification or equivalent
- one year of experience in high volume hotel, restaurant or food service in production of pastries, desserts and baked goods
- knowledge of all basic pastry techniques and skills
- knowledge of basic baking recipes and ability to consistently follow standardized recipes
- ability to convert standard formulas to adjust quantities
- ability to make basic arithmetic calculations
- knowledge of minimum temperature requirements for food and drink preservation
- knowledge of Tribal, Federal, State and local sanitary regulations
- ability to prepare candies, petit fours, frozen and cold desserts
- ability to decorate, portion and plate pastries
- commitment to organizational values
Job Duties
- Convert formulas as necessary to meet production needs based on changing quantities
- participate in daily stand-up meetings to ensure that property communication is understood
- timely completion of computer assisted training as required
- prepare items to established par levels for daily production
- ensure all ingredients are always fresh
- ensure proper temperature requirements are maintained and accurate temperature logs are kept
- perform activities to maintain cleanliness of the kitchen
- maintain the highest standard of personal hygiene and comply with property appearance standards
- ensure that health and safety regulations are maintained
- perform additional duties and responsibilities as necessary or assigned
- ensure quality of all food items leaving the bakery for customer consumption
- punctual and regular attendance in accordance with the attendance policy
