Within this vibrant university system, UNT Dining Services represents the largest self-supported food service department in North Texas, setting the benchmark for campus dining experiences. Consisting of five dining halls, over twenty retail outlets, an upscale restaurant, a hydroponic garden, a central scratch bakery, and comprehensive catering services, UNT Dining is led by a team of professionally trained chefs and hospitality specialists. The department is nationally recognized for its innovative and trend-setting approach to collegiate dining, receiving accolades such as the Loyal E. Horton Award and Vegan Recipe Award. Notably, UNT Dining operates Mean Greens Cafe, the nation's first fully vegan collegiate dining hall, and Kitchen West, Texas' only university dining hall certified free from the Big 8 allergens and gluten. In 2021, UNT launched Eagle Landing, the university's first standalone dining hall inspired by urban food halls featuring seven distinct restaurant concepts available to students under a single Meal Plan swipe.

The Associate Director, Senior Leadership for UNT Dining Services at Eagle Landing is a pivotal senior leadership position responsible for overseeing one of the university's flagship, high-volume dining facilities. This role demands a strategic and operational focus to ensure excellence in culinary operations, guest experiences, financial performance, and team leadership. Serving thousands of students daily in an all-you-care-to-eat setting, the Associate Director ensures the seamless management of menu innovation, food production, and service delivery, aligning culinary strategy with daily operational execution. A key responsibility includes driving continuous improvement to maintain high standards of food quality, consistency, and customer satisfaction, while supporting UNT Dining's commitments to sustainability, wellness, and student engagement.

In addition to operational leadership, the position champions compliance with health, safety, and dietary regulations, promoting responsible sourcing and sustainable practices across all dining platforms. It also plays a vital role in building and developing high-performing teams through recruitment, training, performance management, and succession planning, fostering a collaborative and customer-focused workplace culture. Financial stewardship is critical to this role, as the Associate Director manages budgets, forecasting, cost control, and operational data to support strategic growth. Job Requirements

  • Bachelor's degree in related field
  • Five years of professional related experience
  • Extensive knowledge of food safety regulations
  • Proven leadership experience in high-volume food service operations
  • Excellent communication and problem-solving skills
  • Strong organizational and time management skills
  • Ability to work under pressure in a fast-paced environment
  • Must be able to lift and move objects up to 50 pounds
  • Valid driver's license
  • Ability to obtain ServSafe Manager Certification if not already certified

Job Qualifications

  • Bachelor's degree in a related field
  • Five years of professional related experience or any equivalent combination of education, training, and experience
  • Extensive knowledge of food safety regulations
  • Advanced expertise in managing high-volume culinary operations
  • Strong leadership skills in coordinating kitchen activities and maintaining standards
  • Excellent problem-solving and communication skills
  • Ability to train staff, standardize processes, and enforce procedures
  • Strong organizational and time management abilities
  • Experience performing under pressure in fast-paced environments
  • ServSafe Manager Certification or the ability to obtain it preferred
  • Experience in financial management, staff development, and both front- and back-of-house operations
  • Background in menu development and sustainability initiatives
  • Familiarity with food service systems and data-driven tools
  • Culinary certifications considered a plus

Job Duties

  • Provide strategic oversight of dining operations, ensuring the consistent delivery of high-quality, safe, and efficient meal service across all platforms
  • Establish performance expectations and monitor operational outcomes to align with departmental and university standards
  • Direct and approve menu strategy in collaboration with culinary leadership, emphasizing innovation, seasonality, and alignment with nutrition and sustainability goals
  • Oversee the effective use of systems such as FoodPro to ensure accuracy, consistency, and continuous menu improvement
  • Set and enforce standards for food quality, presentation, and guest experience, utilizing data, feedback, and operational audits to drive continuous improvement and quickly resolve systemic issues impacting dining quality
  • Lead organizational development by overseeing recruitment, training strategy, performance management, and succession planning for management and frontline staff
  • Ensure training programs and food safety practices are consistently implemented and aligned with best practices
  • Foster a high-performance, customer-focused culture that prioritizes an exceptional dining experience, operational efficiency, and team engagement
  • Champion initiatives that enhance service quality, reduce wait times, and improve overall operational effectiveness
  • Ensure full compliance with university policies, health regulations, and safety standards by establishing accountability systems, conducting regular audits, and reinforcing adherence to HACCP and standardized operating procedures across all areas of operation
