Job Description

San Manuel Casino is a premier destination located in California's Inland Empire, recognized as one of the largest private employers in the region. This esteemed casino and resort provides a dynamic, fast-paced hospitality environment focused on delivering exceptional service and entertainment experiences to guests around the clock. The casino prides itself on maintaining high standards of operational excellence, particularly in its food and beverage venues, which operate 24 hours a day, seven days a week to meet the diverse needs of its patrons. San Manuel Casino is committed to fostering a culture of growth, safety, and community responsibility, making it an outstanding place to build a rewarding career in hospitality and gaming.

The Assistant Manager of Food and Beverage (F&B) plays a crucial role within this setting, directly supporting the Manager of Food and Beverage by overseeing efficient operations across multiple high-volume food service outlets. The Assistant Manager takes a hands-on approach to managing culinary staff, bussers, and cashiers to ensure timely preparation and delivery of menu items that consistently meet quality standards and exceed guest expectations. This leadership position is responsible not only for daily operations but also for strategic initiatives aimed at increasing sales, profitability, and guest satisfaction. The Assistant Manager monitors labor efficiency and operational costs, thereby maximizing profit potential while maintaining a quality guest experience in compliance with departmental fiscal guidelines.

In addition to managing finances and operations, the Assistant Manager emphasizes training, safety, and adherence to health regulations. This includes conducting monthly safety meetings, ensuring team members are properly certified in food safety, and maintaining compliance with Health Department standards. The role demands sharp attention to quality control, from food receipt and storage to final service, ensuring every dish meets recipe specifications and quality expectations.

Strong supervisory skills are essential, as the Assistant Manager is involved in hiring, training, performance evaluation, and conflict resolution for both exempt and non-exempt employees. The position also demands effective communication with guests, promptly addressing concerns and leveraging feedback to enhance the overall guest experience. The Assistant Manager must be capable of working under pressure in a fast-paced environment, balancing multiple priorities with a focus on both operational efficiency and outstanding guest service.

This role requires a bachelor's degree in Hospitality Management, Food Service, Business, or a related field, with a minimum of three years of relevant restaurant or hospitality experience and at least two years in a supervisory capacity preferred. Familiarity with Microsoft Office applications, excellent leadership abilities, and strong organizational skills are critical for success. Certifications including Responsible Beverage Service (RBS) and ServSafe are mandatory, and the applicant may also need to obtain a gaming license as per San Manuel Tribal Gaming Commission requirements.

Physically, the role demands endurance to sit, stand, and walk for extended periods, the ability to lift up to 40 pounds occasionally, and perform various physical activities like stooping and kneeling. The position involves exposure to a casino and resort environment, which may include airborne particles and secondhand smoke. Despite these challenges, the role offers the chance to work in an engaging, supportive, and well-respected organization dedicated to employee growth and community impact. Joining San Manuel Casino as Assistant Manager, Food and Beverage offers an exciting career path where leadership, operational excellence, and a passion for hospitality come together to create memorable guest experiences.
