Job Duties
- take ownership of kitchen operations during assigned shifts including opening and closing responsibilities
- lead and support line cooks during high-volume service while actively assisting on the line as needed
- ensure all stations are fully stocked organized and service-ready before each shift
- oversee kitchen closing procedures including cleaning breakdown food storage and completion of side work checklists
- maintain food safety sanitation and health department compliance standards at all times
- monitor product quality consistency portioning and presentation standards
- assist with food cost controls through proper rotation portioning waste reduction and inventory awareness
- train coach and develop kitchen staff not just supervise them
- hold team members accountable for performance cleanliness urgency and professionalism
- communicate effectively with executive chef kitchen management and front of house leadership regarding staffing service flow product levels and operational needs
- adjust staffing during shifts based on business volume and operational demands
- assist in covering call-outs and maintaining service standards during unexpected staffing shortages
- complete end-of-shift walkthroughs and ensure all opening closing duties are completed properly
