The Assistant Chef position at Stubborn Seed is a critical role designed to support the Executive Chef in managing daily kitchen operations and leadership of back-of-house personnel. This role requires a hands-on leader who not only participates in food preparation and station cooking but also plays a pivotal role in mentoring and developing the culinary team. The Assistant Chef is expected to lead by example, maintaining high standards of sanitation, organization, and operational efficiency while upholding the brand reputation of Stubborn Seed.

The job includes responsibilities such as collaborating closely with the Executive Chef, Assistant Executive Chef, and Front of House management teams to monitor and control labor costs and other operational expenses. The Assistant Chef oversees inventory management including the weekly and monthly ordering of food and supplies to ensure smooth kitchen operations without waste or shortage. This role requires adaptability and the ability to work varied shifts, including nights, weekends, and holidays, reflecting the nature of the hospitality industry.

Moreover, the Assistant Chef takes part in daily staff briefings, known as power ups, to motivate and align the team with operational goals. They must ensure compliance with all Southern Nevada Health District (SNHD) regulations regarding sanitation and food safety, ensuring a clean and safe work environment. The role also involves the use of personal devices for operational tasks, document review, and communication, emphasizing the need for tech-savviness and organizational skills.

Candidates for this role should bring at least one year of experience working as a chef in a fine dining, full-service restaurant environment, coupled with the leadership capability to mentor and guide kitchen staff effectively. Preferred qualifications include a degree in Culinary Arts and experience working in luxury resort settings or with property management applications such as Purchasing Systems, Kronos, and HotSOS. The physical demands of this role require stamina for prolonged periods of standing and walking, ability to manage high-pressure situations, and handling items weighing up to 50 lbs.

Job Requirements

  • At least one year experience as a chef position in a fine dining, full-service restaurant
  • At least 21 years of age
  • Proof of eligibility to work in the United States
  • Position required licenses

Job Qualifications

  • Experience in meeting and exceeding VIP guest requests and preparing a custom menu on short term notice
  • Ability to successfully lead and mentor a team
  • Ability to work varied shifts, including nights, weekends, and holidays
  • Prior experience of utilizing property management applications (e.g., Purchasing Systems, Kronos, HotSOS, etc.)
  • Previous experience working in a large, luxury resort setting

Job Duties

  • Work alongside Executive Chef, Assistant Executive Chef and Front of House Management to achieve or exceed budgeted labor and other cost centers, through proper planning and execution
  • Oversee weekly/monthly inventories and ordering of food and supplies
  • Assist with food prep, station cooking and plating of food when necessary
  • Conduct daily power ups
  • Ensure sanitation procedures and organization of work area adhere to all SNHD health code regulations and standards
  • Use personal device/cellular phone for job related operational tasks, job duties, review of company documents, etc
  • Perform other job-related duties as requested
