About The Commissary
The Commissary was a renowned restaurant located in San Francisco's Presidio district, offering a unique dining experience that blended Spanish-influenced California cuisine with sustainable, locally sourced ingredients. Established in partnership with the Presidio Trust, award-winning chef Traci Des Jardins, and Bon Appétit Management Company, the restaurant was housed in the historic Montgomery Street Barracks, a former military mess hall built in 1895.
The restaurant's design seamlessly integrated elements of the Presidio's rich history with contemporary aesthetics. Authentic features, such as lighting fixtures reclaimed from a historic Army gymnasium and Douglas Fir tabletops crafted from salvaged wood, were thoughtfully incorporated into the space.
Seating arrangements included communal tables, traditional and bar seating, and a shaded front porch, providing guests with diverse dining options. An open kitchen allowed patrons to observe the culinary team in action, enhancing the overall dining experience.
Menu and Culinary Offerings
The Commissary's menu was dynamic, reflecting the seasons and availability of local produce. Dishes featured organic produce, humanely raised meats, certified cage-free eggs, and seafood sourced in accordance with Monterey Bay Seafood Watch guidelines.Notable offerings included Sweet Pea and Ham Croquetas, Celery, Red Onion, and Mint Salad with tuna conserva and arbequina olives, Striped Bass with clams and toasted almond-garlic picada, and Roasted Chicken with liver toast, sherry, marcona almonds, and dates.
Desserts like Strawberry, Raspberry, and Goat Milk Sherbet with wild fennel honey showcased the restaurant's commitment to innovative and flavorful cuisine.
